I am vegan so veggies is a mainstay.
I can only eat them cooked since MC.
Cannot eat tomatoes, eggplant, peppers (nightshades) since I have developed an intolerance to them. However, white potatoes can be eaten within reason. Thank the Lord for that.
I tiny piece of raw lettuce will send me straight to the loo.

I have been staying away from corn as it is a sweet vegetable but do love it. Carrots are a once in awhile as they are naturally sweet too. Gads, I hope potatoes stay on my menu
I also love onions, green peppers and broccolli. I really should grill my onions and peppers as they are more digestible.

sautéed spinach rocks!!! my absolute fave!!! in butter, olive oil & toasted sesame oil!! yummy!!
i nibble on iceberg lettuce at work & at home, but i try to have actual salads a few times a week. as i can't tolerate eggs (which are in most creamy dressings), i make my own vinaigrettes for salads.
i don't really care for carrots, but i LOVE raw zucchini & yellow squash just plain or slathered with raspberry vinaigrette. mmmmm!!
i eat more protein than anything & that seems to help keep tummy quieted down enuff so that i can enjoy my veggies, although i'm simply SCARED TO DEATH to even venture down the road of broccoli, cauliflower & my beloved Brussels sprouts. had a TERRIBLE time with those before dx & have been shy of them ever since. maybe one day!!

I seem to do fine with all veggies.....except tomatoes, my most recent intolerance. I can eat them if they are fresh and I wait a few days before eating them again. Canned tomato stuff gets me - probably it's the citric acid that's usually in the can.
Wren...........mmmmmmmmmm. I love brussels too. And sauteed spinach - with garlic too. Also sauteed squash of any kind with onions.

How about canning your own "fresh" tomatos? I have no idea how to do it, but remember Mom and Gram and my Aunt pressure cooking canning jars. Then you are preservative free! Obviously work up front, but still canned tomato product when you need it quick.
I eat all veggies in general. Lettuce was what didn't agree well when the MC was in full force, but I seem to be okay with it now.

Well, thank you kindly Dr. Polly! Tis I and I do look like I should have starred in Lord of the Rings with the elfen-looking ears! lol I have naturally unruly curly hair too. Love straight look so much better but one must do with what the good Lord gave one.

Those recipes are just what I've been looking for. I don't have a cooker as they suggest but do have a five quart pressure cooker that I'll try using.
Ok, anyone have any suggestions as to where I can find the mason jars? Gads, when I still lived up north you could find them everywhere but I have no idea where to start looking for them here in Florida. If someone knows please share the location(s).

Hi...I usually buy my canning jars at the grocery store. I can my tomatoes using the boiling water bath method. The tomatoes have enough acid so you don't really need a pressure canner, or so I've been told. Follow the directions and be sure to sterilize your jars (I run mine through the dishwasher) and just listen for the suction sound when the jars are cooling and make sure the lids "ping" and don't thunk when you tap them after they cool.....that is how I can tell if they are sealed.
