4 eggs separated

Beat yolks well and add 1/4 c sugar & 1/2 tsp. vanilla & 1 tsp. rum extract,(rum is optional)
Beat egg whites till stiff peaks form, slowly adding 1/2 c sugar.

Mix both mixtures together.

In another bowl add 3/4 c GF flour blend

1/4 tsp salt

1 tsp baking powder

Mix together & fold into egg mixture

Grease cookie sheet then line cookie sheet w/wax paper and sprinkle w/1/4 tsp of nutmeg and 1/4 tsp flour. pour mixture in pan

Bake 375 for 12 min.

Spread out dish towel & sprinkle with unsweetened cocoa powder . when cake is hot out of oven , carefully flip it onto the dish towel, take wax paper off and roll cake with the towel, place seam side down on rack to cool.
You can use any kind of filling that is safe for you.
After filling and rolling back up into a log, frost with chocolate frosting.
Then take a fork and run it from one end to the other making it look like a log.
Going to make meringue mushrooms dusted with cocoa powder to add to the decoration of it.

I'm going to try my hand today at making this with the GF flours. Use to make them at the bakery.
