A Different Tweak On Pesto

A Different Tweak On Pesto

2 cups unsalted hulled pumpkin seeds or sunflower seeds
6 tablespoons extra-virgin olive oil, divided
1/2 teaspoon salt
1/4 cup water
2 tablespoons fresh lemon juice, or to taste
3 garlic cloves, smashed
1 cup coarsely chopped fresh cilantro
Combine seeds in a food processor with water, lemon juice, garlic, cilantro and remaining 4 tablespoons oil. Pulse until mixture forms a coarse paste. Taste and adjust seasoning with salt and pepper. Cover and chill until ready to use.
Good on GF pasta with roasted vegetables.
Most pestos contain parmesan or romano cheese.
This will work out great for us! No dairy....
