What do you avoid? Besides the obvious ones of bread that has to rise. Where else should I beware? I've looked everywhere, and I can't find a list...

Are you doing the full candida diet, or just avoiding bakers yeast?
I did the candida diet for a while last year, whilst also taking antiparasitics. It definitely helped, but I think the diet is really just a support to give the herbs a chance to work without too much opposition.
As well as the stuff on Tex's link, I was advised to avoid mushrooms, nuts (they tend to grow fungus in storage), all sugars, fruit for the first two weeks then only limited quantities of some varieties, dairy esp cheese, vinegars, anything fermented such as fish sauce. Watch for mold on food, (eg brown spots on the cauliflower) and avoid the whole item rather than cutting the bad bit out.
There are lots of natural yeasts in our environment, so the idea is to avoid all the obvious things with yeast added, but also stuff which is likely to grow wild yeast. Avoiding all sugar is part of the regime because the sugar is supposed to feed the yeasts already multiplying in your gut.
You want to combine it with some herbs to remove all the parasites. Icon Mabgazone has a lot of info:
