Egg-Free Chocolate Chip Cookies

Egg-Free Chocolate Chip Cookies

Gluten-Free, Dairy-Free, Egg-Free Chocolate Chip Cookies

2 3/4 cups GF flour
1 tsp. salt
1/2 tsp. xanthan gum
1 tsp. baking soda
1 cup margarine (may use 1/2 c. ghee, 1/2 c. Spectrum shortening)
3/4 cup brown sugar
3/4 cup sugar
1 tsp. vanilla
1 1/2 tsp. Ener-G Egg Replacer plus 2 Tbsp. warm water
12 oz. Enjoy Life chocolate chips

Sift together the flour, salt, xanthan gum, and baking soda in a large bowl and set aside.

In a separate large bowl, beat together the margarine, sugar, brown sugar, vanilla and egg replacer.

Add dry ingredients and stir well. Add chocolate chips. Mixture will be fairly dry.

Form into one-inch balls and flatten onto ungreased cookie sheet. Bake for 8-10 minutes, until edges are golden brown. Let cool before removing from cookie sheet. They are very fragile, but will solidify once cooled completely.
