High-Nutrient Gluten-Free Flour Mix

To make 9 cups, each part = 1 cup.
To make 3 cups, each part = 1/3 cup

1 part each:
Tapioca flour
Potato starch
Rice flour
Quinoa flour

2 parts:
Amaranth flour (can substitute part white buckwheat flour)

3 parts:
Sorghum or millet flour

Blend and store in a cool location. This mix works well for almost anything.

If you have a grain mill, you can purchase quinoa, amaranth, unroasted buckwheat and millet as grain and grind it to reduce the cost. Quinoa, unroasted buckwheat (groats) and millet are available in bulk at Whole Foods. Tapioca flour, potato starch and rice flour seem cheaper to purchase as ground flour, especially at certain Asian grocery stores.
