Ok, my LC is now under control with the use of Entocort, BUT my aphthous stomatitis reared its ugly head again this week after I lowered my Prednisone dose to 2.5 mg and after I had the FLU last week (!). BAM! I had a mouth full of awful sores within a few days of lowering the steroid dose (which happened every other time I tried to wean off that drug). I saw my nutritionist 11 days ago, and she was pushing me to eat gluten-free grains like kasha (buckwheat), quinoa, and amaranth. Let me first say that the kasha was disgusting! So, after some further research on my own, I have decided to go back on the PALEO DIET very strictly to get all of these auto-immune disease to heal. (I have Celiac, Lymphocitic Colitis and Chronic Apthuous Stomatitis.)
My doctors really want to get me off the prednisone, but unfortunately, I had to raise my prednisone dose to combat these sores since they were so severe that I could barely eat or talk.
So, I just wanted to let you know that I am about 48 hours into the PALEO DIET right now, and I am feeling a lot better (though it could be from the high dose prednisone!) and have lost 7 pounds total since 11 days ago when I saw the nutritionist. (EVen though I wasn't following the PALEO right away after seeing her, I started tracking what I eat in a program in my iPhone and it really made me cut back on the silly stuff.)
I am hoping that the PALEO DIET will result in a couple of things for me: a remission of my auto-immune diseases, especially a stop to those painful mouth sores; ability to get off all of the steroids; weight loss of 20-40 pounds so that I can get back to my previous weight before all of this horrible stuff happened a little more than a year ago; revitalized HEALTH :)
Posting it here will keep me honest of sticking to the PALEO diet as close to 100% as humanly possible. (It's tempting to bake a gluten-free choc cake, though, so you all have to keep me honest!!!!)

Good for you, for taking control of the situation. Actually, those mouth sores are somewhat common with MC, (and/or Crohn's), but most of us don't have them anywhere near that bad. I used to get them occasionally, for most of my life, but when my other symptoms started, (about 11 or 12 years ago), I had them much more frequently, and they were more persistent. After I had been on the GF diet long enough for my GI tract to heal, they went away, and I haven't had a single one, since then, (not in the past 4 years).
I hope you get fast results from the paleo diet. I believe that you will be pleased with the results, because many people use it not only to prevent allergies/intolerances, but also for weight control. Please keep us updated on how it's working.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

BTW, Kasha is much stronger-tasting than white buckwheat because Kasha is roasted. I don't mind white buckwheat, but I don't like Kasha. Cooked quinoa tastes almost like oatmeal. You can buy both buckwheat and quinoa in the bulk section of Whole Foods for a little cheaper.
