I have been looking forward to getting the results in order to start the right diet and feel better.
It was already suspicious :idea: as when I started a (not complete) GF diet, before the results I started to feel better ... And they finally arrived!!!

It has been confirmed that I have sensitivity to gluten and dairy.
OK I do not feel sad about it, but in fact, happy :grin: Now I know what to do and what to avoid...

I wanted to share this with you...
Before I forget... Polly, Tex, Starfire, Herb_Lady, Babci, moremuscle, TendrTummy & Sally... you have a pm.

All the forum: Thanks for your support and help during this time we have been together... and for the help you will be giving in order to cope with this complete change in our diet...I am sure, I will need your opinion and help soon :wink:

Well, now you know for sure. Gluten and dairy, that's not too bad.

I have almost completely stopped eating dairy except for aged cheese and it makes a BIG difference.

Hi Tessa,

That is great news!! There is nothing better than knowing :smile: This kind of knowledge is bitter sweet, especially at first glance we have mixed emotions but after a while on the diet the feeling of well being and progress in health is so profound that all the questions subside. The wonderful part of knowing is that it gives this tremendous boost of hope since there is actually something you can do to help yourself. It is empowering.

Starting the diet can be an adventure into the unknown and like most adventures it is full of excitement and fear - please, feel free to express it all right here. We will be cheering you on and supporting you when/if the going gets rough.

Sharpen your tools, Tessa - you are on the fast track to gaining back your health and being able to do everything you ever dreamt of. :hungry:

Isn't it a good feeling to know exactly what is wrong?....and what you can do to regain your health??? I am so happy for you! :grin:

There is quite a learning curve involved initially with diet, but before long, it will become second nature. And we will be delighted to help in any way. Just ask!

Tessa, I am so glad for you. Not that you have the problems but that you know now what you have to do for yourself to be healthy. I know you have been waiting a long time to find this out.

I'm glad your test didn't show other intolerances! And you already knew what you were having problems with - or at least had a good idea.

Thank you for all your support and sweet hugs... I am never alone with your posts and words. :smile:
We used to eat food cooked by ourselves and even though I am not a great chef, I have been doing my best... But from now one I have to do an extra effort :chef: as I want to eat as natural as possible and avoid all kind of "strange or unknown" processed food.

I am happy to know the reason of all my problems in the past and my husband and me are starting to walk on the right path to health. :razz:
Of course it is not going to be easy, as (you know) there are always things I was used to (ice-creams, biscuits with chocolate, cheese... :sad: ) but as I said, it is so important to know the reason of being ill... :smile:

I am not really sure if gluten and diary are the only sensitivities to food, as I did not check anything else with the Lab. but I hope to know once I started checking up my reactions to differents foods.
Bread is more difficult as I was very used to gluten bread and liked it so much. The taste of GF bread is so different!

I agree with you about how different the GF breads taste from "regular" bread. In the beginning I started eating GF bread to subsitute the regular bread. After some months I found that I lost interest in bread all together. I don't eat any kind of bread anymore - the exception is an occasional rice "cake"/cracker with a spread of jam/peanut butter/or avocaodo.

Your approach to the diet - using natural foods and avoiding processed foods as much as possible - is probably THE best way to go. If it turns out you have other intolerances in addition to gluten and dairy you will already be avoiding the most likely allergens by eating a natural diet.

You have a wonderful attitude and you are an incredible Lady - such style!!

Don't forget that Enterolab, I think, keeps the specimen for 6 months, should you desire to go ahead and do the other "allergens" -- eggs, yeast, and you can order the soy test "off menu" like several persons did of our group. However, you may want to wait on those while learning this part of the diet, and after these two have been removed, once you suspect something else, you can verify it with the test if they still have the specimen. I've not done the soy as I've not yet retested, so they'll have to do soy, and maybe others that come out when they do my retest. For some reason, I'm not too concerned as I seem to be doing well now. I wish for you the same, my friend!

Tip on most gf bread...toast it first! It makes a world of difference. And try a variety of brands/concoctions to find one that you really like best (if not perfect). For example, I really like EnerG tapioca bread. The GlutenFree Pantry sandwich bread mix is pretty good too, but I think its best use is for french toast, not sandwiches. I've had rice breads I won't eat again.

You are well on your way. I don't even miss bread that much anymore and I was definately addicted to it!

Karen, I am still trying to find a bread I like... I found some not bad at all at a local special supermarket for GF diets... (Just a little expensive).

Hey, thanks Lucy. :razz: I had no idea that they used to keep specimens up to 6 months. We never know, maybe I will do another test in the nearby future. I have never tried to eat soja (and I do not know if I will be intolerant to it)...

Karen, I am sorry to read you do not like bread any more... There must be something you can like. Have you tried all the options? It is a pitty not eating bread...
