It's been months since I posted. It was nice to cruise around the forum tonight.
I took a major new life route and went from teaching kindergarten to high school special ed. It's the hardest thing I've ever done. There are so many needs and I want to save them all...It's been pretty stressful and I'm so thankful that I'm doing well physically - I have this site to thank for that.
I'm still doing well with diet alone. It's been nice to see so many gf items added to the grocery stores around here in the last few months. Have you all seen Betty Crocker's gone gf. That was exciting.
Well, just wanted to say "Hi" and thanks again for all the help.

Hi Becky,

It's great to hear that you're doing so well with the diet.

And congratulations on the major change in the course of your teaching career. Special ed has to be one of the biggest challenges in field of education. Hopefully, you'll be able to figure out ways to keep the stress from getting out of hand. Best of luck to you in your new endeavors.

Glad to hear you are doing so well even with job stress.

I got a free Betty Crocker cake mix thanks to one of the PP but am afraid to make it because it may contain soy.

Hi Becky,

I've been wondering how you're doing. I'm glad to see that diet has worked well for you.

It's well-known in education that Special Ed is very demanding and has a high burn-out rate. I admire anyone who goes into the field. I hope you can keep up with the challenges and that you're finding it fulfillng.

Becky---great for your change from kindergarden to High school -----U have to be very proud of yourself to have gotten to where U are today--including your diet change which appears to have been a good change for U--

JOAN - I am also soy free and have had no reaction to Betty's mixes. Made the yellow cake, cookies and brownies.

HI Gloria,

On the brownies I used egg replacer (potato based) and in the brownies I used about 3 tbsp. for each egg of applesauce. Worked both times.
