Rice Chex Payday Bars

5-6 c. Rice Chex
1 c. brown sugar
1 c. white corn syrup (1 c white sugar + 1/4 c water, bring to a boil, then simmer until it thickens. Let cool.
1 c. peanut butter or sunflower seed butter
1 c. Spanish peanuts or nuts of your choice

Grease 9"x13" pan. Heat sugar and white corn syrup in large bowl in microwave on high for 4 to 5 minutes or until boiling. Stir in peanut butter and peanuts; mix well. Add Rice Chex and gently mix. Pour into greased pan. Cool and cut.

BTW, when I made the Rice Crispie Treats (Erewhon cereal), I just melted the marshmallows with a little bit of water in the microwave and stirred in the cereal and sometimes peanut butter. Of course, that was before the soy free margarine. I think I would still do it to save calories.

DH just asked me the other day if I had an intolerance to marshmallows because I hadn't had them in a long time. I said no and that I just was trying not to eat so many calories. (A foreign idea to him.) :lol:
