French Fried Onion Rings
1 cup peanut oil or coconut oil (they can take the high heat.)
1 cup GF flour blend
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
2 egg whites ( Haven't tried it, but I bet you can use egg replacer)
1/2 cup DF milk (Just make sure that you use the original flavor of your milk and not the vanilla flavored)
2 teaspoons white vinegar
2 large sweet onions, peeled and sliced into thick rings
Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees.
Place the flour in a shallow baking pan and mix in the pepper, garlic powder, onion powder and the cayenne pepper. (You will add the salt "after" you deep fry the rings.)
In a medium bowl, whisk together the egg whites, milk, vinegar, until frothy.
Dip the onion rings in the wet ingredients then into the flour mixture until coated.
Then dip in the egg white mixture again, and then into the flour again.
Fry onion rings in the hot oil a few at a time so they are not crowded, until golden brown. Drain on paper towels.

Mushroom Soup
1 tablespoon oil
1 8oz. package fresh, sliced mushrooms
1/2 sweet onion, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
Pinch of dry celery flakes
Pinch of dried thyme
Saute mushrooms and onion until they are soft.
Put them in a sauce pan that you have added:
1 1/2 cups of DF milk
Now you are going to make a roux using:
3 tablespoons Earth Balance GF/DF/SF margarine, melted
Start with 1 1/2 tablespoons of sweet rice flour.
I melt my margarine in a coffee cup in the microwave for 20 seconds.
Then add my sweet rice flour and mix with a fork.
You don't want your roux to be runny or pasty. Kind of in between.
Stir the roux into the milk, mushroom, onion mixture that has been heated on medium, and it will thicken. You will be able then to see if you need to add a little bit more milk to get the mushroom soup consistency.
If you want to make your thickener without using margarine and to make a slurry:
2 tablespoons sweet rice flour
1 1/2 tablespoons water
Mix together.
Pour into your milk, mushroom, and onion saucepan.
Heat until thickened.

Putting The Casserole Together
2-3 cans cut green beans
Use the amount of your homemade mushroom soup to the consistency that you prefer for your casserole.
Chop up your french fried onion rings and put some in the casserole and save some to put on top the last 5-8 minutes of your baking time.
Bake in a lightly greased , 2 quart casserole dish, covered, at 350 for 30 minutes or until bubbly.
Then top with the remaining chopped, french fried onion rings and bake an additional 5-8 minutes.

Dee, I know that there is a GF source for the traditional French's Fried Onion Rings that you can buy that are pretty darn close to the original thing. My CD daughter-in-law bought a can and used it to make the Green Bean Casserole for Thanksgiving last year. The next time I talk to her I'll find out where she got them and post it here.

There is a funny story associated with this. She had gone to great trouble to order these onion rings special for Thanksgiving. The recipe says to put some in the casserole and then save some to put on top. The casserole was in the oven when her brother-in-law passed through the kitchen. He saw the onion rings, and thought that they were just some extra lying around. Being a hungry male with all those yummy smells around, he was scarfing down the onion rings just as Hilary came back into the kitchen.....

Are you thinking Funyuns???? As far as the the GF/DF onion rings???
