Time for a paleo discussion
Hi Cavedwellers and others!
Let's see if we can entice folks out of their caves for some paleo talk! Matthew - how is your appetite? Any new cooking tips for us? Shirley, How are you coming along with eliminating the soy? Dee - any progress on the cookbook? Newbies - what aspects of the diet are you wrestling with? Gloria and Pat - what's new with your diets? Anyone - jump right in.
My latest discovery is Wholly Guacamole's box of individual serving packs (100 calories each) of guacamole. They are so convenient. I can open a new one and eat it in one meal.....it's perfect on a baked potato. For those who do corn or rice tortillas or GF bread, turkey spread with guacamole makes a wonderful sandwich. Of course, it can be eaten in a romaine leaf too.

I've always felt that I don't follow the Paleo diet, but this quote from Tex makes me feel that perhaps I do, with some modifications:
I use a pressure cooker to cook pot roast (35 min.), round steak (12 min), pork chops (12 min), and beef stew (15 min) so that they are tender in a short time. If I have a lot more time, I'll use a crock pot. I also use a countertop convection oven to cook meats (pork and beef roasts) that I want to be seared. When I'm in a real hurry, I'll eat a hamburger.
I'll also make German potato salad with sausages. Sometimes I make potato pancakes with breakfast sausages and applesauce.
This week I decided to make cooked quinoa cereal with strawberries and rice milk for breakfast. It was pretty good and reminded me of oatmeal. I've noticed that quinoa has gotten pretty expensive in packaged form. I buy mine from the bins at Whole Foods. It's pre-washed (a must for quinoa) and about $2.99/lb., compared to $11 for Bob's Red Mill's 24 oz. package. I also buy white, unroasted buckwheat there and grind it into a flour for my baking flour mix.

I'm excited to read about Wholly Guacamole's individual servings of guacamole. I've been thinking about putting it on my turkey sandwich and baked potatoes. I am able to eat flautas at a local Mexican restaurant and love using guacamole as a topping. DH and I trade the sour cream and the guacamole. I found a taco seasoning mix without soy or wheat at Whole Foods, and I've begun making tacos again using Old El Paso tacos.The paleo diet will definitely help, provided that you stick with it long enough to allow your intestines to heal. You don't necessarily have to avoid every neolithic food item, just the ones that are problematic, such as dairy products, legumes, (especially soy), and all grains related to wheat. Most of us find that we can safely eat certain non-paleo foods, such as potatoes and rice, for example.

Other than using the Spectrum Canola Mayonaise and Natural Peanut Butter without soy and just trying to eliminate both gluten and soy as much as I can for the time being, I haven't done too much other than trying the gluten free Chibi bread which was a flop for me. I feel that my life in such a constant flux I just don't want to deal with doing more than that right now. I am still taking 2 Asacol twice a day and I sometimes get a bit constipated but then next time stools might be pretty darn soft. I have been buying canned tuna/chicken/salmon with only water & salt for a long time so I didn't even think of that and anytime I have a "burger" at home it is without a bun or bread of any kind but I'd been doing that for a long time also.
Since I don't seem to have any really good HFS nearby I did order some things from Kinnikinnick but they haven't come yet and I can't even remember what I ordered without looking it up. I do remember that I decided to try the donuts. (not paleo, I know) I'm just trying different things and collecting different recipes that interest me. They are all on this computer though and unless I get a chance to print some out before leaving for Pa. I'll have to wait before trying any of them. I hope to get out of here by the 27th which would give me the time to try a few but I don't know where I'd get will or energy right now. HaHa
Anyway, I am looking forward to reading some more posts about this. Sorry mine is not helpful.

I'm not paleo all of the time. I do my share of rice, potatoes, etc. I find that sometimes I just need them for bulk - otherwise I go around hungry all of the time. That's one reason I'm hoping I can keep tolerating the farm eggs - they keep me full.
Shirley, how does that Spectrum canola mayo taste? I think you're doing well tackling the gluten and soy for now. Saw your review of the Kinnikinnick goodies. Sounds as if you are anxious to get back to PA. Are you still on for the 27th?
Gloria, what is in the flour you make up besides the buckwheat? Have you tried that guacamole yet?

The flour mix contains one part each of tapioca, potato starch, rice, quinoa and buckwheat flours and two parts each of amaranth and sorghum flours.
I'm getting a little more confident about replacing different flours in the mix. I added a little teff flour last week to something I made. I have some Montina flour, too, but I haven't used it much. I also have some coconut flour that I bought on clearance. The only thing I've made with it were coconut cookies, egg-free of course. They were very tasty and light.
No, I haven't tried the Wholly Guacamole yet. What store carries it? I might have to avoid it if it contains onions. Most prepared guacamole does.

Hmmmm. The guacamole snack packs do contain dehydrated onion. I get them at my usual chain grocery store in my area, Giant Foods.
Are you OK with the sorgham flour? I recall that G' Ma Mary (who was gluten-sensitive only) reacted to sorgham too. Those coconut cookies sound yummy. Did you post the recipe?

Yes, still shooting for the 27th to leave for Pa. Wish I didn't have to come back in mid July - just in time for the worst heat and the dreaded hurricane season. Still, I can look forward to getting SOME permanant crowns in my mouth and then taking off again to catch fall in Pa.
I love the Spectrum Canola Mayonaise. I can hardly tell the difference from Hellman's Original which I had used for many, many years.

Thanks for asking. I really can't even think about Paleo right now. I really don't tolerate fruit at all, and very few veggies if any. I am still experimenting with those. Meat - chicken and fish mainly - and rice and buckwheat cereal are my mainstays. I am not sure about potatoes yet, well heck I'm not sure about anything. Even with 9 mg/day of Entocort for almost 5 weeks I still am not having Normans. I guess I am a Paleo wannabe. I am glad to read that you don't eat Paleo exclusively, I thought you did and I just couldn't figure out how you weren't starving to death.

Sorry for not responding for a while but in 30 years of being self employed I have never had to work so hard to get work into the the shop let alone do it. I am so blessed having worked with really creative people that still have to work and are willing to share or combine talents and keep everyone solvent There is an upside to this economic crises in that, at least in my case, it brings a whole new concept of bonding and working together. That has to be good ;-)
I made a seafood chowda, almost to good to believe. Started by sautéing finely chopped onions , celery , carrots, lemon grass and garlic in a bit of olive oil , then adding a 5.5 FL. OZ can of Thai Kitchen Coconut milk with just a bit of Thai kitchen green curry and some home made chicken stock . Not enough curry to make it so hot that it melts your toe nails just a tad to notice it. Then added tilapia or shrimp or Perch, any thing that suits your fancy . Maybe even chicken or left over chicken.
So great to have a cream soup, so flavorful, without any dairy. And soooooo Good !
I know it it is not a very popular idea but by eliminating all grains and grains substitutes I have been able to expand my diet exponentially with more fruit and more vegetables. The stuff I love.
Well....... it works for me.

Pat, i found this post and noticed you wrote it back in May - you were where i am now: no fruit or vegetables, meat seems okay, any kind of rice (rice, rice protein, rice milk, rice cheese) okay, and i've eaten baked potatoes (just the insides) a couple of times and i think they are okay - but you're right - i'm not sure about anything. Entocort is working but nearly everytime i attempt to add something to my diet it sets me back to cramps, gas, bloating and even some urgent stools. Even with a food diary it's really hard to figure things out. I'm just curious how you are doing now that a couple more months have passed for you? Hope you are doing much better - can you give me a little info on how things have progressed for you? i'd so like to know that this will get better some day....Pat wrote:Polly,

I am Karen, formerly moremuscle, now I am sleeponit - I had forgotten my old password and created a new account so I could post.
It's great to be back and read some of your posts and see the life and the sharing of ideas and the help, encouragement and support you provide to each other and to newbies. We were all once newbies - meeting you guys was transformational to me. You changed my life!!
Matthew, I am glad to see you've regained your appetite for food and for life. You are a good person and you inspire the best in all of us, especially the best chef on all of us. Well, a chef I am not. But I do prepare food for myself and my family every day - most of the time we love it. I am very fond of the food I eat. Especially if I have time to carerfully select ingredients that are of good quality and fresh. With good ingredients in the refrigerator and all the cabinets it becomes easy and delightful to prepare meals or to find something to snack on.
Sometimes I get bored with what I do - I don't experiment very much with food anymore. I tend to grab the same old things that I know work for me. There are so many other things I have to do in our hectic family life - food is just one of them. Can you believe my boys are 11 and 14 years old now?
They eat more and more and they have their personalities and food preferences to take into consideration when I shop and cook. I am to a large extend responsible for having developed some habits in them - allowed for Noah to be a picky eater, allowed too many refined carbs to be consumed by them, allowed for sodas to have entered the picture etc etc etc. On the other hand, I also make sure they get vegetables, fruit, nuts, fish and meat. They are strong and healthy - never sick - (knock on wood). Just received H1N1 shots at school; my husband and I were/are both happy that they were able to get them.
Recently, I thought to myself I should not be so complaicant (sp?) - that I should open my eyes and mind to finding foods and trying products and recipes that I had not yet done. That would be a way to shake out of boredom and not just shove the food down w/o tasting it. I was quite surprised to find that such a wealth of new food products are now available - tried a very delicious coacoabutter w/o sugar added, amazing melt in the mouth, very rich, a real treat. At my regular (relatively small and in many ways bad) grocery store I found that they had added an entire shelf unit dedicated to glutenfree products - voila! I couldn't find anything glutenfree there 5 years ago when I became sick with MC. Things apparently change - more people are aware of digestive problems possibly being connected to gluten in the diet. I decided to try glutenfree oats. Wow, it was a mind blowing decision - I felt positively wonderful when I fixed my first bowl of glutenfree oatmeal with cinnamon, cranberries and sliced apple.
