I'm turning into "those people" I used to scoff at
I go to the health food store for heavens sake. I used to nuke me a Marie Collender dinner every night.
I'm baking and cooking- something I haven't done since the kids grew up and moved out.
I read labels, a true torture for a woman who put off grocery shopping at all costs. Grocery shopping was a chore before. Now its a challenge.
I read this board once or twice daily. And I used to wonder if people that did that type of thing were nuts! Now I know I will be (nuts) if I don't learn all I can from you all.
I get angry, and think about all the things I can't eat or drink anymore. But then I remember what they caused, and just for today I can follow this diet.
I used to read for pleasure. Now I read to educate myself.
My baking thus far has been awful. Biscuits that would have made good hockey pucks. My dog wouldn't even eat them. But I'll keep trying. I bought some rice bread, and hated it. But it will get better.
I have cooked some dishes that were delicious. Shocked even me.
So I'll quit whining, and go to bed. Thanks to all here for your knowledge, sharing and caring. And Wayne- miss ya. Get well quick!!!

i have to admit to the same situation.......
people that had to eat at certain times for medication in my healthy days i had no understanding or empathy and scoffed at it.
Now that i am in that situation where i have to eat and have medicaiton to a semi strict routine i have felt pangs of guilt at my niativity to this situation
Lucky for me i am able to cook without too many diasters or i think i would starve........

All of your feelings are very normal....
I am so proud of you for going from popping a processed food into the microwave, to experimenting with cooking.. You Go Girl!!!!

I do so empathize. Some of the first gluten free meals I made that I thought would be so good were horrible.
Part of my family thinks I am insane to eat the way I do but their idea of a green salad is three different colors of green jello. With artificial sweeteners.
I read every label for months trying to figure out ingredients. Then just gave up. Not really, just changed my whole way of thinking about food. Fresh fruits and vegetables , meat , chicken and fish are my staples. Along with a myriad of spices I make a lot of tasty meals.
But not always. Like you I have to keep my sense of learning, my sense of adventure, take pride in some dish coming out great and then finding even more joy in the happy accident. And not feeling bad about the not so good ones.
It makes me laugh! I can remember cooking some dishes early on that were delicious. And yes it “Shocked even me”.
You have one up on me in that I do not have a dog to experiment on. LOL! Maybe I should get a dog as part of MC treatment.

Ah Colleen.
Your post made me smile. It is great that you are having a go. I have always been a cook, but that doesn't stop me from having some serious disasters. A limitation on gluten/dairy now just makes it more interesting.
Have fun experimenting with food. There is so much cool stuff you can do yourself - and it usually tastes better.

I read your post and it was right on target and just so beautifully written and true.
I came up with a biscuit this weekend that was not a hockey puck recipe.
2 cups Bob's Red Mill Flour Mix
4 tsp. GF Baxing Powder
2/3 c Milk (I used rice milk)
2 tbsp. Butter - I used ghee
Sift dry and add the butter and cut through with a fork and then add milk gradually. Pat out on lightly floured board and cut into rounds. Bake 12-15 minutes at 450 degress.
I actually used mine as a topping for a chicken "pot pie" dish I came up with. Delicious.
