Honey-Mustard Chicken/Red Potatoes

Honey-Mustard Chicken/Red Potatoes

4 boneless, skinless chicken breasts
Season with salt/pepper
Place in a 9x13 baking dish
In a small bowl combine:
4 tablespoons of Dijon mustard
2 tablespoons of honey or pure maple syrup
2 minced shallots
2 chopped garlic cloves
1/2 teaspoon thyme
Spread this mixture over chicken breasts
Take 1# small red potatoes and cut each one in half
Toss them in a little olive oil and salt/pepper to taste
Place them around the chicken.
Preheat oven at 375
Bake 50-60 minutes stirring the potatoes halfway thru baking time
