Chicken Marsala

Post by Dee »

4 boneless, skinless, chicken breasts
2 tablsp extra virgin olive oil
1/2 cup GF flour blend seasoned with garlic powder, onion powder, thyme, paprika, salt & pepper
1/2 c white wine or marsala
1/2 c chicken broth ( I use Kitchen Basics or homemade chicken stock)
1/4 c lemon juice
1 small can mushrooms
Heat oil over medium heat .
Dredge the chicken breasts in the flour blend, put in skillet, and brown on both sides. Take out of skillet.
The add the wine, chicken stock, lemon juice & mushrooms.
Simmer for 10 minutes.
Put the browned chicken breasts back into the skillet with the sauce and continue cooking (covered) for 15-20 minutes.
Great served with garlic smashed potatoes, and a veggie...

Dee, I tried this out and it was fantastic. My DH's eyes popped open, he said that he really loved it and hoped that it wouldn't be too long before I made it again! He doesn't have a real good sense of taste, so there were some nice strong flavors that came through for him. And of course I thought it was real yummy too!
