I was browsing through a farm stand yesterday, and came across some jellies and jams made with sugar (not corn syrup). The only ingredient that I didn't know the origin of, was pectin.

Anyways, if you are craving jam and can't find a corn free version, I can look into sending some care packages.

Hi Katy,

Thanks for the generous offer. Unfortunately, I seem to have a problem with virtually all sugars, so all I can do is dream about eating jellies and jams. Sigh.

Pectin shouldn't cause problems for anyone, since it's a natural product made from ripe fruit. It's kind of waxy,and I believe it's used as a thickener/emulsifier, in jellies.

Katy,

It's so nice of you to think of us!! I love jam/marmelade. I eat it only rarely because I don't eat bread or bread substitutes anymore but sometimes I put some jam on a rice cake. I have found several corn free versions at the HF store - and Wayne recommended Smuckers simply 100% Fruit long ago - it is available at most grocery stores and it is good.

Yes, that's really sweet of you to think of us. Actually, I have found some jams that are just 100% concentrated fruit. If you find any sodas that do not have corn syrup as the sweetener, please let me know.! Thanks again.

Katie,
I just put up 3 batches of plum jam! It's super easy. Sure Jell fruit pectin has directions inside the box for all kinds of jams and jelly. I've done it so much that I'm down to 2 hours from start to finish including setup and clean up.

Yes, definately! I've got rasberries galore. I now have a nice trade going with one of our admin folks at work...she has 11 blueberry bushes (to the point where her family gets tired of blueberry this and blueberry that) so she brought me a big bag of fresh blueberries on Friday and I've picked some raspberries for her this weekend. So anyways, blueberries and rasberries mixed up with just a smidge of sugar on them makes a nice dessert, but other ideas are welcome too.

Okay, here's the ingredients from the Sure Jell box. Dextrose, citric acid, fruit pectin. I didn't realize it before but it has dextrose and citric acid in it. I emailed Kraft and asked them the source but probably its corn, wouldn't you think? Anyway if you're still interested, I've posted the basic recipe for raspberry jam in the recipe room. Sorry, I thought I was on to something corn free. If it's any consolation, I don't seem to have any problem with my own jam.

Katy,

Can you freeze some raspberries? I've been adding frozen berries to my homemade lemonaid. How about fruit smoothies? You must have a lot of berries to make it past the picking and eating stage!

Jean, I've got tons of berries...I figured I've picked 10 to 11 cups so far and thats just from the perimeter and two paths that go through the patch. There are lots more in amongst the thick parts of the patch that I haven't waded in to yet. And since I discovered last week that some of the weeds are neddles :sad: I'm trying to be careful. Boy do those sting! I pulled a lot of it today with gloves and all.
