Now the Mayo Clinic has also discovered that most adult celiac patients retain a certain amount of permanent damage to their intestines, due to gluten. For decades, experts claimed that mucosal histology promptly cleared up, in response to the GF diet, but now it has become clear that most celiacs who are diagnosed as adults, will never completely heal, regardless of how strictly they follow the GF diet.
However, I can't help but wonder if this is because the damage is inherently permanent, or because gluten is so ubiquitous these days, that it's impossible to avoid trace amounts in our diets. Most celiacs eat processed GF foods, and those foods do not contain zero amounts of gluten. They contain less than 20 parts per million, (assuming that they are in compliance with the labeling laws, and as we all know, sometimes they are not in compliance, and they contain much more than 20 ppm). The bottom line is, if you eat enough processed GF foods, the odds are fairly significant that you will occasionally ingest a lot more gluten than you realize, through no fault of your own.

being on a Dutch celiac support group, I am always surprised how busy they are eating the same way they used to do but than gluten free. Gluten free bread, gluten free cookies, cake, crackers, gluten free pizza, sausage, gluten free croissants ....Not eating things that are naturally gluten free, like fruit vegetables meat (unprocessed), fish. Instead of changing the whole diet (what most us have to do here), stick to the way they were eating but with gluten free replacements. Not that there is anything wrong with it, but I am just surprised and sometimes amazed
