Best GF tortilla's??

I'm needing something more then just lettuce to wrap my sandwich ingredients in. I was thinking I might be able to do a GF tortilla better then the breads. I have texture issues. :) The ones I just tried from French Meadow tasted like cardboard, and were really hard and stiff. I even nuked them in a wet paper towel for a bit. Anyone have a fav that is somewhat soft?

I bought 30 Mission brand yellow corn tortillas and they are terrible. What a disappointment! :drool:

The rice tortillas from Trader Joe's are pretty good, you just need to really toast them on a pan before filling them, otherwise they are gummy - which is my experience with pretty much every GF bread.
Resolved MC symptoms successfully w/L-Glutamine, Probiotics and Vitamins, GF since 8/'09. DX w/MC 10/'09.

It's been a while since I tried those rice tortillas, but as I recall, they weren't too bad, just not good enough to "hook" me as a regular user. I believe that Polly uses them, sometimes.

Down here in Texas, there are zillions of corn tortilla manufacturers, of all sizes. Making tortillas, like making good masa, is an art, and be aware that even the best, will occasionally turn out a, let's say, "less than ideal" batch, now and then. A lot of things can go wrong, and if they happen to turn out a sub-par batch of masa, then the tortillas made from it will certainly not be ideal. Obviously, though, the best manufacturers are more likely to consistently turn out top notch products.

My favorite brand is Guerrero. These are made by a Mexican company, (Gruma Corporation, which as I recall, bought out Azteca Milling, somewhere around 12 to 15 years ago, and Azteca owned quite a few tortilla plants here in Texas). The ones that I buy, for example, are made in Irving, TX, (which is near Dallas, TX). For all I know, they may have plants all over the country, by now. Anyway, I prefer their white corn tortillas, but their yellow corn tortillas are good, also, and I'll bet that they're available in your part of the country as well, because Walmart stocks them, (at least they do down here). If you store them in the refrigerator, corn tortillas will keep for a long, long time. I just take them out, wrap them in a couple of paper towels, and nuke 'em for a minute or so, as I need them.

I have a batch of dough resting right now. I have a client coming any minute but when they leave I'm going to tackle rolling these out, and cooking them up.

I'll give you all a review when I get them done!

Tex - if they flop I'll have to try the corn ones again. Never been a fan of them but they got to be better then the store bought rice ones!

Hmmmmmm. Never even thought about GF flour tortillas. I'm surprised that something like this is not available commercially. Of course, that might be due to shelf life problems. :shrug:

I'll be looking forward to your review - this could be interesting.

OMG! I just finished making these and they are fantastic! A real PIA to roll out though, but worth the effort if you need something that almost resembles normal. I really need to put some weight on so the extra carbs should do me good. I also didn't get 8 out of them, maybe 4 or 5 I'll have to go back and check but I actually stopped working on them and ate one with turkey, tomato, avocado, and spinach.

I promised my youngest DD that I would help her learn to edit photos tonight, then I'll be uploading photo to my blog of the process and final product. I'll also have some questions for you all that came up while I was cooking. :)

Because they were so sticky they had to be rolled thicker then store bought, but I am using them for sandwich wraps so I didn't mind. At least they wrapped around the food without breaking, and had a soft chewy texture. That's all I needed. :)

I'm going to try her flat bread recipe over the weekend & I hear her yeast bread is great also, but I'm off yeast as well so I can't try that one. [/url]
