Multiple food reactors / wonderful cookies

Hi all,

My sister and I are gf, df, ef, yf, and sf, so before their weekend trip to San Antonio, she and my bil made some cookies using a Namaste mix (ones they now carry, that come in a brown bag, at Whole Foods. Probably some of you have had to order those by mail in the past.) Also, she mentioned to me today that they'd actually added a little of the unsweetened coconut flakes that I'd shared with her from my little clear tub of it like I also buy at wFs. Since both sis and I both can't have egg whites, they used egg replacer.

Wow, these were BETTER than normal people cookies...I kid you not!!!

There's not much of a recipe since most ingredients are in the sack/package, but I need to get more details including how much of the coconut flakes they used, and get back with you.

Anyone know if those of you with corn issues would have a problem with any of the Namaste ingredients?

I've even given my bil an assignment with their pizza crust mix for this weekend. I honestly think he could make a second career out of adapting recipes for people with food issues -- he's really gifted at this, but then his Mom is an excellent cook, so perhaps that's where he picked it up. Also, his Mom is working on some things.

It sure does work out nicely when your sis has the same food problems as you do -- fringe benefit! I think bil will probably do a veggie pizza first (minus cheese, of course). I really like em when they're loaded with big, chunky veggies, don't you? In the freezer, I've got some gf, etc. Canadian Bacon that's pretty tasty, so might throw some of that on one sometime.
Pepperoni seems to always have dairy, sooo...

Luce, can you tell me more about this from Whole Foods? I go there on a regular basis now and not sure what this is and in what isle you find it? The baking isle I presume?


Want to use this and make some good cookies for myself- yummmy

You should be able to find it where the special flours are, like Bob's Red Mill packages, and other brands. Namaste really does have quite a few products on the shelf at our Whole Foods, and this one is the "Cookie Mix." I just bought more tonight!

I asked my sister how much of the unsweetened coconut flakes they put in the mixture, and she said that she'd told my bil to just use about a quarter of a cup -- presume that's what he did.

My sister said that she really likes em, but guess since she's no longer got those allergen-induced or gluten-induced opioid complexes goin' on, she said she no longer wants to eat quite so many at a time like before going off the foods we react to. Not sure I won't crave em anyway, but that's because I tend to let my blood sugar get too low, especially in the early part of the day. Not good to do that, I know, cause then ya crave sweets, right?!

Don't think you've got a problem with eggs, but just in case someone reading this does, the Egg Replacer product by Ener-E, found in that same location, worked great with this mix.

The coconut you could find in one of the places where they have nuts or dried fruits, etc. in the little clear plastic tubs. Ya might have to ask someone for assistance on this one if they've hidden them from you. They usually have stockers all over the store, so just grab one, and they'll gladly point you to where to look.

Let me know how you like em if you fix some. The sugar's included in the mix, and it IS sweet. Sis thinks that the little bit of coconut might've added to that, but I don't think it added much since it's unsweetened. It did add a lot in terms of flavor and crunch, I thought, but then we all have different tastes.

I stopped by WF and inquired and the marketer didn't know about it. I did look in proper isle thoroughly. I hope that now he saw the spelling on my paper he can locate this product for stock.

I do have an egg intlerance as well. I really wanted to investigate the corn chance in the ingredient panel too. Sometimes corn is in baking powder and if it's already in the mix it may be a "no" for me also. I am checking the corn situation for myself as I believe corn syrups are no good. I have yeast issues and sugar makes this condition worse.

Thank you for all the info too!!! Would organic coconut work ok? I think I saw the little tubs you mentioned too.

If you are not using eggs and baking, please try Energie egg replacer. It is wonderful and does the job well.

I am also looking for that brand at Whole Foods but it seems they don't all carry the same thing. Glutano's cookie mix has worked well for me and I just use the Energie egg replacer. Gonna keep looking.

I don't see the Glutano mix at my WF either. Darn! I ask and then wait to see if the store will carry them.

At one time my WF carried Glutino cookies but they sold so quickly that they can't keep them on the shelves. I believe they just stopped stocking them. What a shame. Also, Fearn mix was a good one too and they no longer carry this one as I inquired a month or two ago. This one contained soy flour and I'm not at all too sure if this is a good choice for me either. I am waiting test results on this one.

Yep, I think it may depend on what you're making whether various egg substitutes are best to use. I think that some recipe sources are good about telling you which one to try with what recipe.

Perhaps we could share information whenever we try a particular recipe in which we have to replace yet another ingredient or even if we just substitute something because that's what we had it in the cabinet and wanted to use it up in place of something else or just cause we like it.

Hey, maybe we could do this in the form of follow-up posts to original recipes in this site's recipe section. I think that would be GREAT, and easy to use, unless, of course, the substitution was so major that it would be easier to access under it's own new post/recipe title.
That being the case, we could still do a follow up post to the original referring the reader to the new post/recipe's title.

How does this sound?

Do you remember the name or title of the guy you talked to at the store. It might be effective to call the store while he'd still remember your conversation to see if he'd found out anything about the product. If he'd not looked into it yet, you could call back AGAIN in another week, but you might want to ask him first, what would be a reasonable time for him to look into it. Saavy?

I know the store marketing manager and anyone can call and suggest food items they are looking for. I've been on a couple of GF tours but am becoming better familiar with the food chain relating to non gluten.

I belong to a local support group and receive recipes that I could include here if you wished. They usually come every two months and they are tried and true ones that members have made. Some are for those with fewer intolerances but also a few for those with multiple food issues. I think the last issue contained one for almond cookies? Will check.

I really miss eggs. It is sad because they are a good food source with a lot of protein.

Hi Lucy, MJ, and Maggie,

I think I have a bag of Namaste Mix in my cupboard - however, I think it is the waffle mix. I've never tried it. Your description of the cookies makes me want to try the cookie mix; maybe my kids would like the cookies too - we usually don't bake but we could break the habit if we really wanted to. Thank you for sharing this info with us, Lucy.

I am happy to hear how well you and your sister get along and how you can mutually support and help each other in your MI situation. It makes you feel a lot less weird when other people around you have the same food intolerances. You have been the family pioneer and we are proud of you and your accomplishments with both your sister and mother - aren't you proud of yourself!!

I've used egg replacements (for Ron's cholesterol) when I make his cookies and they do work very well.
