easy, yummy panini recipe

My panini maker has changed my life. I can now make delicious, toasty sandwiches and the press makes the g-f bread as close to the real thing as I've tasted in months.

Here is the heavenly ham and cheese I just ate:

Food For Life brown rice bread
G-F ham (Dietz and Watson makes some good lunchmeats, most w/ o chemicals)
local garlic cheddar* (Cabot is a great brand w/ many low-fat options)
*you can substitute soy cheese or some other allergy friendly alternative--a swipe of hummus sometimes satisfies my cheese craving.

I am so jealous that you have Cabot's up there. A few years ago my hubbie and I went through their cheese making operation. We sampled so many wonderful cheeses. Here in TX I can get the cheddar and 50% lite cheddar at Sam's. The rest I have to wait until I make a trip to the East Coast to get the other varieties.

I just found some Dietz and Watson turkey lunchmeat at a local grocers and was tempted to buy it because it had no gluten, carrageenan, and some other suspect ingredients. I'm glad I didn't because here is the list of ingredients in the Classic Homestyle Turkey: Turkey Breast, Water, Nonfat Dry Milk, Contains Less Than 1.5 % Of Salt, Sugar, Sodium Phosphate, Potassium Chloride, Browned In Canola Oil.

The Gourmet Lite Turkey Breast contains: Turkey Breast, Water, Contains Less Than 2% Of Nonfat Dry Milk, Salt, Sodium Phosphate, Potassium Chloride. Browned In Canola Oil.

It looks like you can eat dairy, so the milk ingredient may not present a problem to you, but it would bother about those of us who can't do dairy. Even Applegate Farms turkey contains carrageenan, something I can't eat either. The best turkey I've found (which Polly recommended) is Boar's Heat 40% Low Sodium Turkey. It's usually pretty expensive, but is on sale right now at a local grocer. I'm going to stock up and freeze it.

BTW, I noticed that a jar of pickles in my refrigerator lists glucose-fructose (wheat) as an ingredient. They are from Germany...I wonder if there's a translation error. I'm not eating them anyway because I can't do vinegar or cucumbers, but I would never have suspected pickles to contain wheat!
