I made some amazingly yummy GF muffins yesterday, if I do say so myself! They taste just like regular flour muffins! I am shocked! :eek: Next.. chocolate cake... :mwahaha:

Linda, you are going to do just fine with GF. You will be surprised how good things taste that you are not going to be missing wheat at all! The soy is the pain. Thank goodness for Dee's recipies. I think when we all started out, we worried about where can I eat out, what bread can I use etc, because we all want to keep the same life style. There's the rue................... it is a different life style but believe me once you adjust, t really is okay! My hubby and daughter eat a lot of the same foods I eat. They each have their own special bread and a few other items, but when dinner is served, we are eating the same things. You keep trying those recipes and I want to keep hearing about your progress. I like new ideas; because what works for one might work for someone else! Take care of yourself. Ginny

Thanks, Ginny. Yes, it was such a big relief when I found out that there is such a thing as GF bread, flour or cereal.. I was really concerned about breakfast foods. I actually thought I would have to eat nothing but eggs and rice for breakfast !!! Thanks to everyone on here who gave me tips about what I could eat for breakfast.. you gave me a ray of hope in what appeared to be a deep dark abyss.. Am slowly adjusting to the lifestyle and starting to think "GF".. it really is mindset and a lifestyle as you said. Now if I can just get the soy and casein AND G Free all in my mind simultaneously!

I think you were asking me what works for breakfast for me , Joe. I hope so cause I'm gonna answer you :lol: Well, I buy this great GF cereal at our local Health food store called Maggie's gf Cereal and it is a blend of what looks to be puffed rice, some kind of flakes, cranberrries, pumpkin seeds and I don''t know what else but it's great with almond milk. I like it even better than my old favourite! I also now have my home baked GF muffins, and a couple of times a week I'll have eggs. I bought some GF flour mix and I see that they have a recipe for pancakes on there which I am looking forward to making this weekend. If the muffins can taste so good , I am sure GF pancakes can too because pancakes are even simpler in terms of ingredients. And sometimes I will have a toasted bacon sandwich on Gf bread or just make toast from it.

What do you have for breakfast?

everyone at my work comments when i warm up my savoury muffins for morning tea.....

because i put a bit of the home made stock in them they have a great smell (and taste) when they are warm.

Linda, you have encouraged me to get into some baking. You made my mouth water! Yum , Muffins. I already have the flour which is a mix of maize, rice and tapioca. Also a bread and scone mix. Have been out of the habit of baking for some years since hubbys heart and diabetes probs began but now I think GF is a good reason to have some goodies in the tins. Im told the mixed flours are nicest and I certainly find I prefer the mixed flour breads.
Im havng trouble finding GF yeast and baking powder. I will go specially to a health store I think, next time out.

Keep up the good work Linda. Baking can really be fun and sometimes challenging to do GF but the results will surprise you. Much better home made than store bought.

Udi's muffins (lemon and blueberry) are really good but expensive. :roll:

DH just bought me a package of their pizza crusts and they are so much better than the K. brand. I put on sauteed fresh mushrooms and sliced black olives. I used spaghetti sauce for the tomato sauce. I didn't even miss the cheese.

Joan, I do love (and miss) pizza, and had never thought of making it without cheese. I am going to try that!

Yes, Gabes, now I remember you writing about your savoury muffins. And now I think I understand why all your coworkers mouthes water when you heat them! I am going to have to try to make savoury ones too. I am off on another two day ( course) on Monday and Tuesday and am just dreading it, food wise. I am just starting to get better!!! Maybe I'll make some of those and just live on them :lol:

Maggie, I agree homemade are much better. We have a local company that makes GF stuff ( and Maggie is her and her company's name!) and while I was grateful to be able to buy some, her muffins were so dry ( bread and cereal are great though!)_

MJayn, I used a bought flour mix for the muffins, too, and if they are any indication , I think I'll stick to a mix of flours. I haven't bought all the ingredients to mix my own yet, but I have gotten some of them.

I know I said I don't like cooking but I have always loved to bake and still do. I actually trained as baker in my younger years.

I take all my own food and snacks to meetings/workshops.

i even take my own coffee cup and glass so i can ensure there is no cross contamination.
a small container of clear non fibre juice (i have apple and blackcurrant) is a great mid afternoon pick me up (and it keeps my Vit C levels healthy)
I have a small insulated bag that i carry my goodies in with a small freezer brick to keep them chilled.
i pack all my cutlery for the day etc.

the small amount of prep the night before or in the morning is so worth it, no matter what happens during the day i know that i have my food.
