Sandwich spread

Anyone have any safe sandwich spread ideas? I cannot tolerate the traditional mayo, dressing, etc... I think it is because of the eggs - which I know I am intolerant of. I even tried Gray Poupon, which I loved, but had quite a bit of gas and indigestion from. Looking for a good tasting alternative. Now that I found Udi's bread, I am actually excited to have a sandwich - just need a good spread. Thanks!

Hi Dewey,

It's nice to see a picture with your name. It helps us remember everyone.

My mock mayonnaise (linked above) is the closest I've found to real mayonnaise w/o eggs or soy, but because it contains vinegar, I'm no longer able to use it. If it's too thin, you can add less liquid or more thickener.

I found an Egg-Free Olive Oil Mayo on the Gluten Free Goddess website: http://glutenfreegoddess.blogspot.com/2 ... -mayo.html which I was able to use by replacing the vinegar with dry mustard. It didn't have the same consistency as the mock mayonnaise recipe, but it was tasty. I'm no longer able to use it because I have to avoid olive oil, but you might want to try it. I didn't have a problem finding tahini paste in a jar.

I'm experimenting with plain mashed avocado, but I think the avocado is giving me very small mouth sores. My sandwiches are pretty dry right now. I may try to make the Egg-Free Olive Oil Mayo using a different oil. It will probably not be as tasty, but it will be moist.
