At the Bittersweet Bakery (a GF bakery) in MN they were out of many items so I went ahead and tried their monster cookie - which contained Oats, pecans, raisins, choc chips and peanut butter chips. In fact I had 2 over a period of 2 days. It was like oatmeal cookie heaven I'm not sure what kind of oats they were, but figured trying it from a GF bakery was probably my safest bet...and I had no problems whatsoever.
But I'm not eager to whip up oatmeal cookies just yet! Though I have recovered from my recent modified food starch episode...I guess I figure why rock the boat? Aside from cookies, I'm not an oatmeal fan anyways...I know several people have toyed with the idea of trying it - if you are so inclined - proceed with caution, but preliminarily I'd say it should be okay...

I'm so glad you were brave and survived oats! Maybe they use a special kind at Bittersweet. Oatmeal cookies are one of my favs. Wish I could have one; over at the delphi forums, Miriellle posted a recipe for cookies that have no oatmeal but taste just like the real thing. I'm going to try them when I get a minute.
