Gluten free bread? And other GF foods.

My doctor didn't say anything about removing gluten from my diet after the diagnosis a few days ago, but after doing some research I'm seeing where some people benefit from gluten free diets. Could you all help a scared sick newbie out and list some of your favorite products that you can eat. I was happy to see that my favorite sandwich "steak-umms" were gluten free, however bread is not, so I need to find a bread replacement. What about cheese and mayonaise, are these allowed, or do I need a substitute?

I need help desperately, the MC has been creeping up on me for 5 years, however it turned severe in the past month, I have been skipping to the loo 8 times a day everyday for a solid month, and barely eating anything at all. I drank my questran last night, and still woke up with the scooties, so I'm hoping that once I remove gluten from my diet maybe then the questran will work, who knows.

Please list your favorite gluten free foods.

IDreamInColor first look at Dee's Kitchen on this website. The recipes are Gluten/Dairy/Soy free. This should be a good start. When I first started to change my diet, I just wanted "substitutes" for everything that I used to eat; not always possible. I now do not eat any grains except rice simply because of all my intolerances and that's why it is important to find out what your intolerances are so you can eat right to get well. You will find that most of us need to be DF as well as GF, and many of us are SF as well. Make sure you read all labels on processed foods. If you can, I would suggest shopping on the outskirts of the supermarket; all processed/sugar foods are in the middle, fresh is on the outside. Ginny

I hope you have a Whole Foods, Trader Joes's or health food store near you. Prepare for sticker shock.

My first visit to my HFS, I told one of the owners, "Here I am, your new best friend."

You can do a PP search for any subject.

Bread, I use Udi's. It's not great but it seems better than the rest. Crackers, I use Edwards. Margarine is Earth Balance soy free. Mayo is Hellman's Canola. I am soy free, so if you aren't you have much wider choices.

I use Ian's products and Kinnikinick (sp?).

Make certain that your meds and vitamins are free of your intolerances.

Your local large chain super markets are beginning to carry more GF foods. Ask where you shop if they have a GF section. Our Safeway, Frys, and Bashas have a small section. I like shopping at Trader Joes and Sprouts. Sprouts has a 30 page GF booklet that contains all the GF items they carry in the store. It gives you an idea of all the items that are available.

Things can also be ordered on line. I buy Pamela's Baking & Pancake Mix on line as well as her Bread Mix & Flour Blend as I bake my own bread using a bread maker. I recently ordered the box of 3 bags (4lbs in each bag) and then sold two bags to people at the local Celiac Foundation monthly meeting. I just checked the web site and the price went up $6. since I ordered it three weeks ago.

My town does not have a Sprouts, but I'm sure that list will come in handy. Thanks for posting it.
