Hi Rich,

I always managed to gain weight by just eating more of whatever I could safely eat. Can you eat corn? There's a reason why farmers use grains to fatten livestock. Corn is the favorite feedlot choice, because it is the cheapest grain that will do an optimal job, but all grains are very fattening. In general, corn will put the pounds on livestock faster, and with the most efficient feed conversion rates, and the lowest risk of complications due to digestion issues.

Many people in the general population have a weight problem because they love pastries, (made from wheat flour), but note that pound for pound, corn is more fattening than wheat, because corn contains about half the protein, but slightly more carbohydrates, than wheat, so it has more calories than wheat.
Corn chips, for example, are very fattening. If you look at the label on a bag of tortilla chips, the number of calories listed per "serving" is not all that high, (to tempt consumers into buying it), but the problem is that a "serving" is usually considered to be something like 7 chips. Who eats 7 chips? Why bother even opening the bag, if you're only going to eat 7 chips? :lol: Sorghum is very similar to corn, in it's nutrient analysis, but while sorghum flour is popular in South America, it is used very little for human consumption in North America. Sorghum is a popular ingredient in feedlot rations in this country, though, because it is not too far behind corn, in feed efficiency ratings, (weight gain ratings).

Tortilla chips are "safer" than Fritos for most of us, though, because Fritos contain enough corn oil to cause me to have D, if I eat very many of them, and if you're going to use them to gain weight, you have to eat more than just a handful of them. Potato chips are also fairly fattening, if you eat enough of them, but most of them seem to contain a fair amount of oil, (which, of course, is the source of a lot of the calories), so be careful that you don't overdo the oil intake. If you can't eat corn or spuds, rice is another high-calorie grain. It's not used much in feedlot rations, simply because it's too expensive to be used for that purpose, unless it's "out of condition", (damaged, or spoiled).

I can do rice (in fact that is my safe food). Also, I will consume more tortilla chips as well.

Going to get some coconut oil too per previous recommendations.

I have the opposite problem.

The things I drop to help me lose weight include:

Chocolate - Bonvita rice chocolate or Sweet William, or Lindt 85% chocolate, or homemade (cocoa butter & cocoa powder & sugar)

Wine. This one is a last resort!

Chips/crisps (the sort in a packet).

GF Bread and GF/DF margarine - with honey or jam(Jelly?) or MightyMight (Aussies need a Vegemite substitude). I also stop spreading margarine or avocado on my corn thins (corn version of rice cakes).

GF cakes/muffins/biscuits/fruit & nut bars/lollies etc. There are heaps ready made, and the muffin mixes are easy to make.

Fried food - Potato chips (French Fries?), fried GF bacon and eggs for brekky, frozen GF fish fingers etc. Having a fried egg on GF bread.

Nuts - Not everyone can tolerate these obviously.

Coconut milk in stir fry's & marinades - eg, satay, thai red curry etc. Also coconut milk on black sticky rice, or tapioca pearls. Or in Dee's caramel recipe.

Mayonnaise - proper homemade - egg yolk, mustard, vinegar and oil - yummier than the bought rubbish and quick once you get the hang. Let me know if you need a recipe.

GF cereal for breakfast (it leaves me hungry so I then grab more junk).


The main thing is snacking while doing something else. That is how I put on weight! And no, I don't eat all this on one day - but I would eat some of them everyday when I am putting on weight.

Lyn,

A friend just sent me a gluten-free care package that included Rudi's Raisin Bread. Have had 3 slices already. It is excellent and honestly tastes like real bread. We will see how I do in the morning, but I am happy to find a bread that is indistinguishable from real wheat bread.

You do take it cautiously :lol:

Hope you put margarine or at least jam on that bread to up the calorie count.

I don't insist on bread tasting like wheat bread. So long as it will hold a topping it is worth trying. Particularly when you beat an egg with a dash of water, soak the bread in it and fry it.:wink:

So many ways to put on weight :cat:

Rich, sorry I don't have any ideas on gaining weight. Coconut is good, though.

I was diagnosed with colagenous colitis in 2009 and have lost over 25 llbs. now i am under 100 lbs. i have applied for ss disability and have been refused. do you know anyone who has gotten ss disability because of c.c.

Hi,

Welcome to the board. Yes, at least a couple of members have successfully applied for SS disability. The most recent changes in the Americans with Disabilities Act clearly qualify CC as a disability under the ADA, so it should also qualify for SS disability. You should be able to qualify on the basis of a diagnosis alone - proof of actual disability is no longer required. You may have to hire an attorney who specializes in SS disability claims, if you're having trouble winning approval on your own.

Quoting from the amended act:
Disability

The term "disability" means, with respect to an individual

(A) a physical or mental impairment that substantially limits one or more major life activities of such individual;

(B) a record of such an impairment; or

(C) being regarded as having such an impairment(begin bold text) (as described in paragraph (3)).
(2) Major Life Activities

(A) In general

For purposes of paragraph (1), major life activities include, but are not limited to, caring for oneself, performing manual tasks, seeing, hearing, eating, sleeping, walking, standing, lifting, bending, speaking, breathing, learning, reading, concentrating, thinking, communicating, and working.

(B) Major bodily functions

For purposes of paragraph (1), a major life activity also includes the operation of a major bodily function, including but not limited to, functions of the immune system, normal cell growth, digestive, bowel, bladder, neurological, brain, respiratory, circulatory, endocrine, and reproductive functions.

(3) Regarded as having such an impairment

For purposes of paragraph (1)(C):

(A) An individual meets the requirement of “being regarded as having such an impairment” if the individual establishes that he or she has been subjected to an action prohibited under this chapter because of an actual or perceived physical or mental impairment whether or not the impairment limits or is perceived to limit a major life activity.

(B) Paragraph (1)(C) shall not apply to impairments that are transitory and minor. A transitory impairment is an impairment with an actual or expected duration of 6 months or less.
(i) The determination of whether an impairment substantially limits a major life activity shall be made without regard to the ameliorative effects of mitigating measures such as

(I) medication, medical supplies, equipment, or appliances, low-vision devices (which do not include ordinary eyeglasses or contact lenses), prosthetics including limbs and devices, hearing aids and cochlear implants or other implantable hearing devices, mobility devices, or oxygen therapy equipment and supplies;

I'm not an attorney, but the qualifications are spelled out in very clear language in the revised version of the ADA. The eligibility of a diagnosis of CC for SS disability qualification should be automatic, IMO.

pasta and GF food

I made a good, rich Bolognese sauce and served it with De Boles rice penne. The penne was almost inedible. We each ate a little with a lot of sauce and then threw out the remainder of the pasta. The texture was awful and so was the taste. I have tried the quinoa little shells in pasta fagiole and they aren't bad. Both my husband and I love pasta and I'd love to find a brand that actually tastes like pasta. If I can't find one, I will make regular pasta for my husband and something else for myself. Please, someone tell me there is pasta out there that is tasty and doesn't have the texture of cardboard.

Dragged out the old bread maker machine and will try homemade bread. The GF bread I've had is VERY small with a hard crust and not cheap. Had a GF frozen NY style bagel this a.m. and it was definitely NOT a NY bagel. I guess this is to be expected but still pretty disappointing. I'm still new at this GF diet, one week and counting, and I guess everyone goes through this at first with the GF food. I now understand why so many of you make things from scratch.

Asked my GI doc to take me off asacol as it isn't working and put me on entocort. He upped the dosage of asacol and wants me to try that for another 2 weeks (6 caps a day). In the meantime, I was up about 8 times last night with D. I stopped counting and just sat there and read a book.

On the plus side, yesterday after one week being GF, I had more energy and felt more like myself. I'm tired today after being up so much last night but I don't have that "sick" tired feeling. ;-)))

BTW, a friend who is an excellent Italian cooks makes her Italian bean soup with the already cooked pasta put into the bottom of the bowl and the soup poured on top. I know that the pasta soaks up the liquid and can make the soup too thick. I kind of like it that way but it apparently isn't authentic.

Any suggestions about tasty, already prepared food will be greatly appreciated. I do love to cook but going back to basics and having to make my own bread, soups etc and NO convenience foods, is depressing.

Try Tinkiyada pasta, and Udi's bread and other GF baked goods.

Asacol contains lactose, so it makes the D worse for some of us.

Hi Rich, familiar with the problem, I also have lost one of two kilo's in the last two weeks. Since my range of food is still very limited, I try to eat more than 3 meals a day and I add 2 or 3 spoons olive oil to my breakfast, lunch and dinner (what is always the same rice with chicken or rice with fish :-)) I hope still will prevent me of loosing anymore weight, at the moment I am at my minimum of 53 kg.
