Low Sugar EF Maple Muffins

Low Sugar EF Maple Muffins

1/3 - ½ cup brown sugar
2 tsp. baking powder
1½ cups GF flour mix*
1½ tsp arrowroot mixed with 2 Tbsp. warm water
1/3 cup oil
½ - 2/3 cup milk (depending on the flour used)
1 tsp. maple extract (available at Super Target stores)

Mix dry ingredients together in a bowl. Heat arrowroot for about 15 seconds in microwave until it begins to thicken or gel. Stir until it is the consistency of an egg white. Add arrowroot, oil, maple extract and milk. Gently stir just until all dry ingredients are moistened. Spoon into 8 muffin cups until almost full. Bake at 375º for about 35 minutes, until a toothpick inserted in the center comes out clean.

*I use my rice flour mixture for these:
3 Tbsp. amaranth flour
½ cup rice flour
5 Tbsp. arrowroot
½ c. cornstarch
You never know what you can do until you have to do it.
