Kris,
Congratulations! It certainly sounds as though your case of MC was indeed triggered by the use of NSAIDs, and since it appears that no food sensitivities were triggered when the disease was initiated, you should have no future problems with the disease, so long as you avoid NSAIDs.
Would you mind posting your test results here, and allowing us to add them to our database of test results? Since the course of your disease is so different from most cases, your test results could be very helpful for any new members in the future, who might happen to be in a similar situation. In case you're not familiar with the accumulated list of test results that I'm referring to, here's a link to it:

Thanks.

P. S. Merry Christmas! Many of us might view your prompt remission as an awesome Christmas gift.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Thanks...
to everyone for all the well-wishes. I am thankful that my MC (so far) is so easily managed, and am hoping that others soon find remission if they haven't already. FYI, I did send a PM to Tex with my test results, which are pitifully simple compared to everyone else's.
Merry Christmas and Happy Holidays to you all...

Thanks for the update. I added your test result to our list. If that wasn't what you intended, please let me know, and I'll certainly remove it.
I hope your holidays are happy and healthy, too,
