Blueberry “Cream” Pie (DF, GF, EF, CF, SF)

Blueberry “Cream” Pie yields 1 pie

Crust
1/4 cup dates, pitted, soaked I prefer the crust with unsoaked dates, it makes the crust more like a graham cracker crust. I have also substituted raisins or dried figs for the dates and it was lovely.
1/2 cup walnuts
1/4 cup almonds I’ve used pecans as a substitute for either the walnuts or the almonds (both nice).

Filling
2-3 medium bananas
1 lb. blueberries (fresh or frozen) fresh is best!
1/2 cup dates, pitted I’ve used raisins or dried figs for sweetness here too.

1. In a food processor, using the “S” shaped blade, blend the crust ingredients well. I’ve done this in a Vita-Mix, a regular blender and a food processor (they all work well).
2. Press mixture firmly into the bottom and sides of a pie plate, forming a crust.
3. Slice the bananas into 1/4″ rounds, leaving 1/4-1/2 of one banana for the creamy filling. Cover the bottom of the pie shell with a layer of banana pieces.
4. In a food processor, blend one cup of blueberries with the remaining piece of banana and 1/2 cup of dates. Mix in the remaining blueberries (whole). Pour this over the sliced bananas in the pie shell. Garnish with walnuts. Chill and serve. Blueberries have pectin in them, so when you chill the blended blueberries they will set and make a firm pie. I make this pie as I’m making dinner, by the time we are done with dinner, it’s set and ready to eat

That sounds positively divine, Linda. Although I find myself steering away from a lot of sweets due to my strict diet, I certainly wouldn't mind this dessert. Before being diagnosed, I absolutely LOVED eating bananas and dates. I haven't had them since I visited the doctor (among other things), and frankly I've been afraid to try most foods for fear of getting sick. How well does your stomach handle these foods, Linda?

I have not had a chance to try this recipe yet... I found it on a blog site (glutenfree goddess) but I eat Bliss Balls , at least two a day :-) and I tolerate them very well. They have just ground up dates, dried fruit and nuts. Everything in moderation though so I bet a tiny little piece wouldn't hurt you :grin:
