Guacamole (GF, DF, SF)

Post by MBombardier »

Every time I fix this, it is wildly popular with my family and for parties. It's an old Southern Living cookbook recipe.

2 avocados, cut up
1 med. onion, finely chopped (about 1/2 cup)
1 or 2 green chili peppers, finely chopped
1 Tbl. lemon juice
1 tsp. salt
1/2 tsp. coarsely ground pepper
1/2 tsp. ascorbic acid mixture (Fruit Fresh)
1 med. tomato, finely chopped (about 3/4 cup)

Beat avocados, onion, peppers, lemon juice, salt, pepper, and ascorbic acid mixture until creamy. Stir in tomato. Cover and refrigerate at least 1 hour. Serve with corn chips.

Makes about 2 cups.
