Taquitos

Taquitos

Corn tortillas-Mission Brand
Vegetable oil (I use canola)
Strips of cooked chicken, turkey, beef, or pork (about 5-6 inches long and 1/2 inch in diameter)
Tooth picks
Heat tortillas on a dry griddle and place in a towel lined tortilla keeper or covered casserole dish.
Take one tortilla and lay a strip of meat on top, roll into a tube shape and secure with a tooth pick in the center. Repeat until desired amount are rolled.
Heat about 3 inches of oil in a medium sauce pan until very hot.
With tongs, gently drop 3 taquitos into hot oil and deep fry for about 1 minute, until crispy.
Place taquitos on paper towels to absorb excess oil.
Taquitos can be served immediately, or stored in the refrigerator, and re-heated in a 375 degree oven for about 20 minutes, or until crisp.
Serve with guacamole or salsa.
