1 lb GF spaghetti
1 lb boneless chicken breast (cut into bite-sized pieces)
2 teaspoons fresh ginger, grated
salt
pepper
6-7 scallions, cut into small pieces
1 cup carrot, grated
1/3 cup chicken stock
1/4 cup "mock" soy sauce
1/4 cup teriyaki sauce
1-1/2 teaspoons cornstarch or arrowroot
2 tablespoons sugar
2 tablespoons toasted sesame seeds
Directions
Cook pasta according to directions.
While pasta is cooking, brown chicken pieces in 2 tablespoons of oil, with grated ginger, salt and pepper.
Once browned add scallions and carrots.
Cook veggies for 3 minutes, then add stock, "mock" soy sauce, teriyaki sauce, cornstarch or arrowroot and sugar.
Bring sauce to a boil, then turn to a low simmer until pasta is done cooking.
Drain pasta. Rinse for about 45 seconds. Then put pasta back in the pot & turn heat to medium & toss pasta until the excess moisture has evaporated.
Then stir together pasta and chicken mixture.
Top with toasted sesame seeds.

Yes I make both soy & teriyaki sauces.
Teriyaki
1/2 cup gluten free soy sauce
1/4 cup brown sugar
2 tablespoon oil
1/4 teaspoon ground pepper
1/2 clove garlic
1 teaspoon dry ginger
Combine together the soy sauce, brown sugar, oil, pepper, garlic and ginger in a mixing bowl and blend well using a wire whisk.
This sauce is so easy to make, all you need to do is set it aside to let the ingredients flavor each other.
Soy Sauce
3 tablespoons white vinegar
3 tablespoons molasses
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Sometimes I like to add 1 teaspoon of sesame oil.
Combine all ingredients.
