Well I keep finding people with...... relations, friends and colleagues with "celiac"....

We are getting very near a "tipping point" on gluten sensitivity. And mainstream medicine is soooooo behind the curve on this it ain't funny!! Egg on their face time....

By the way, I agree with you - one of these days, a lot of "prestigious" GI docs, and celiac specialists, are going to be "eating a lot of crow". I hope they can find a good recipe to make them palatable. :lol:

Recipe for crow-

Clean and remove feathers from crow.

Attach it to a cedar plank.

Season with salt a pepper.

Place it in front of a banked fire.

Cook for five hours.

Throw the crow away and eat the cedar plank.

A gourmet delight.

I was inspired by your post to search for allergy warning dining cards. I found a good site with the ability to individualize the cards at Supermarketguru.com Thank you for this post. Not that I'm planning on going out to dinner any time soon, but it's nice to know that it MIGHT be an option.

Here is the latest version of Ant's world famous eat/can't eat dining card layout that many of us use when eating out. Often, if you just present a card listing the things that you cannot eat, (and the list is long), some chefs will be baffled, and simply state that they can't accommodate someone with such a strict diet. By listing the things that you can eat, also, it makes their job much easier, and they are usually willing to try harder to help out.
Here is my latest revised "to the chef 'card'" in case anyone wants to copy and adapt for their particular needs.
To The Chef…. I suffer from 2 diseases (Celiac & Microscopic Colitis) causing multiple food intolerances.
CAN EAT:
• Rice boiled/steamed or fried in olive oil, rice (not wheat) noodles.
• Grilled, fried or baked (unprocessed) meat, fish, shellfish: these can be seasoned/marinated with salt, pepper, herbs, garlic, dried coconut, onions and any vinegar (except malt vinegar) – but NO soy or Worcester source or MSG. Only olive oil (not other vegetable oils). Balsamic oil if pure, but not when artificially coloured since that contains gluten.
• Any well cooked (peeled) vegetables EXCEPT beans, peas, tomatoes, potatoes and peppers
• Any cooked mushrooms.
• Cooked fruits (fruits with skins peeled)
• Olives and nuts (except peanuts and cashew nuts)
• Herbs, salt and pepper
• Wine, coconut milk (no guar gum added), green tea, pure coco and black coffee.
CAN EAT IN SMALL AMOUNTS:
• Cane Sugar, glucose, fructose, pure maple syrup, honey.
CANNOT EAT:
• Gluten (and similar) – wheat, rye, oat, corn, semolina, and other seed based flour, bread, cakes, biscuits, pasta, cuscus, tapioca, beer, malt vinegar. (Can have rice cakes, rice flour and pasta, water chestnut flour)
• Dairy – milk, cream, butter, cheese.
• Beans, peas, guar gum, peanuts (legumes) – including Soy, Soya e.g. Tofu.
• Eggs and Nightshades (potatoes, tomatoes and peppers).
• Raw vegetables including salads – vegetables should be well cooked.
• Cashew nuts and peanuts.
• High fructose corn syrup, aspartame
• Vegetable oils – except Olive Oil, which is fine.

If you need to communicate to a Thai chef I have now persuaded the owner of a Thai restaurant near my flat to do this translation for when I travel next to Thailand (hope the font works on your computer).
แขกแพ้อาหารบางชนิด ทำให้ท้องและลำไส้อักเสบ

อาหารที่ทานได้
- ข้าวสวย, ข้าวต้ม หรือข้าวที่ผัดกับน้ำมันมะกอก (olive oil), เส้นก๋วยเตี๋ยวที่ทำจากแป้งข้าวจ้าว( ที่ไม่ใช่ทำจากแป้งข้าวสาลี), แป้งข้าวเจ้าหรือแป้งที่ทำจากแห้ว
- เนื้อสด จากสัตว์ ปลา หอย ที่ไม่ผ่านกระบวนการแปรรูป ปรุงด้วยการย่าง ทอด หรืออบ ปรุงรสด้วยเกลือ พริกไทย สมุนไพร กระเทียม มะพร้าวอบแห้ง หัวหอม น้ำส้มสายชู ( ยกเว้นน้ำส้มสายชูที่ทำจากข้าวมอลท์ ) และ ห้าม ใส่ซ็อสที่ทำจากถั่วเหลือง วอร์เซสเตอร์ซ็อส ผงชูรส ใช้น้ำมันมะกอกเท่านั้น ห้ามใช้น้ำมันพืชอื่นๆ สามารถใช้น้ำมันบัลซามิคบริสุทธ์ ได้ (Pure balsamic oil) แต่ห้ามชนิดที่ใส่สีเพราะผสมกลูเต็น ที่แขกแพ้ (กลูเต็นเป็นสารที่อยู่ในแป้งชนิดหนึ่ง)
- ผักที่ปอกเปลือกแล้วและปรุงสุก ยกเว้น ถั่วต่างๆ ถั่วเหลือง มันฝรั่ง มะเขือเทศ พริกหยวก พริกหวาน
- เห็ดปรุงสุกทุกชนิดทานได้
- ผลไม้ที่ปอกเปลือกแล้วปรุงให้สุก
- มะกอก อโวคาโด ( ยกเว้น ถั่วลิสงและเม็ดมะม่วงหิมพานต์)
- ผักสมุนไพร เกลือ พริกไทย
- ไวน์, กะทิ (ห้ามใส่สารที่เพิ่มความข้นเหนียว), ชาเขียว, โกโก้แท้บริสุทธิ์ และกาแฟดำ

อาหารที่ทานได้บ้างในปริมาณน้อย
- น้ำตาลทราย กลูโคส ฟรุคโตส( น้ำตาลที่อยู่ในผลไม้) น้ำเชื่อมเมเปิลบริสุทธิ์ที่ใช้ราดแพนเค้ก น้ำผึ้ง ผลไม้แห้ง ผลไม้สด

อาหารที่ทานไม่ได้
- กลูเต็น คืออาหารจากแป้งต่างๆ (ยกเว้นแป้งข้าวจ้าว และแป้งที่ทำจากแห้ว) แป้งสาลี ข้าวไรน์ ข้าวโอ๊ต ข้าวโพด แป้งหมี่ แป้งมันสำปะหลัง ขนมปัง เค้ก บิสกิต พาสต้า คูสคูส(cuscus) มันสำปะหลัง เบียร์ น้ำส้มที่ทำจากมอลท์
- ผลิตภัณท์ที่ทำจากนม นม ครีม เนย ชีส
- ถั่วชนิดต่างๆ สารที่เพิ่มความข้นเหนียว รวมถึงถั่วเหลือง เต้าหู้ อาหารที่ทำจากถั่วเหลือง
- ไข่ มะเขือเทศ มันฝรั่ง พริกหยวก พริกหวาน
- ผักสดต่างๆ สลัดผักสด ( ผักทุกชนิดที่ทานได้ต้องปรุงให้สุกก่อน )
- เม็ดมะม่วงหิมพานต์ ถั่วลิสง
- น้ำเชื่อมที่ทำจากน้ำข้าวโพด สารเพิ่มความหวาน( น้ำตาลเทียม )
- น้ำมันพืชต่างๆ ยกเว้นน้ำมันมะกอก

I like your list. With regards to rice... can you eat rice at all or is it the processing of the rice that concerns you?

I seem to do fine with rice. It is in the "can eat" list.

Although, I do not have rice milk because of other ingredients in it.

I think i still have one of my chef cards that was translated into french. it is the old version with the cant eat first. If i find it when i am doing the unpacking i will post it.


the new version with the can have works really really well.


Rich - i just got the chance to watch the Steve jobs speech, wow. MC is definately a dot in our lives that will make sense down the track but may not make sense now.

his attitude to each day would you be happy if this was your last and listening to your heart is what resonaited most for me. it is having the courage to make whatever changes are required, the change in jobs and the move has made my heart sing, it has given more wellness to my body, life is what i create it to be here as Gabe as i am now, only 3 people here knows the before MC Gabes, and that feels good. and those 3 people have seen me on days when MC is really bad and totally get why i have made the changes i have made.

Why is guar gum something you can't have? I tried to look it up, but can't seem to find any information that would caution me against it.

Loved your card! How big is it? I'm trying to figure out if this is something I could do on MS Word myself.
