Check out wellshire.com
Make sure you check out their allergen database and check off your intolerances. It will then bring up products that are safe for you...
I have eaten their bacon, pepperoni, lunch meats, polska kielbasa.

I have taken 2 packages of the polska kielbasa and sliced it into rounds.
Put those in the crockpot. To them add:
1 large apple, peeled, cored, then dice.
1 chopped onion
1/2 c brown sugar
Mix everything together in the crockpot..
Set on low for 6 hours, stirring every so often.
Or you can set it to high for 3 hours, also stirring so often.
I like this served over jasmine rice.
If you like you can even add a can of white cannelini beans to the mixture right before serving.

I think this is probably the site Dee is referring to:

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
