Main dish: Sweet and Sour Meatballs

This is a mild sweet and sour sauce.

3/4 lb ground beef
1/4 lb ground pork
1 egg's worth of egg replacer powder plus water, optional
4 T cornstarch or equivalent tapioca, softened first in cold water 5 minutes
1 t salt
2 T. onion, chopped
dash pepper

1 T oil
1 c. pineapple juice
1 T. wheat free soy sauce
3 T. vinegar
6 T. water
1/2 c. sugar
4 slices pineapple, cubed

Combine meat, ONE T. cornstarch, salt, onion, and pepper with hands: form into balls. Brown in oil (I browned until they were just a minute or so away from being cooked all the way through), drain, put in a casserole dish. Cook oil and pineapple juice over low heat for a few minutes, add cornstarch/tapioca, soy sauce, vinegar, water and sugar. Cook until thickened. Pour sauce over the meatballs, put pineapple cubes on top, cover and bake at 325 for about 20-30 minutes . . just enought to make sure everything is thoroughly warmed.
