Yesterday's Meals

Discussions can be posted here about mediator release testing (MRT), as offered by Oxford Biological Technologies, in conjunction with the LEAP program, which is claimed to determine a relative level of sensitivity to various foods and chemicals by measuring an increase in the ratio of liquids to solids in a blood sample that has been exposed to a specific allergen.

Mary Beth - I filled out a candida questionnaire, resulting in a high enough score to make me positive. We didn't really talk much about what to do with candida. When she looked at my food log to help figure out why I couldn't seem to get out of the flare, she told me not to eat honeydew melon because of the candida. She also said to stay away from alcohol for now (I was indulging in an occasional martini:)), as "it corrodes the GI lining". I love your idea about fig jam - only vaguely knew it existed :). MRT/LEAP sure opens up a whole other world of food options.

Tex - thanks for the fiber clarification - not really sure I understand it, but that's probably because what goes on in the body has never been of much interest to me until recently, so I have a lot to learn  . My take-away message is that as long as fibrous food is very well cooked, it is easier to digest, and will cause the least amount of damage to the gut while healing. As much as I like crisp veggies, I've learned to adapt to this rule :(.

Love,
Kari

I've really enjoyed reading what you all are eating and hoping that one day I too will be eating more things - you give me hope. Had to take out legumes and beets were a bad experience. I am eating only Quinoa, meats, and Chebe bread (tapioca bread), potatoes, olive oil, zuchinni and yellow squash: so far so good with this basic diet - not normans yet but at least I am not having explosive or watery D. Potatoes may have to go. I am going to look into the biscuits Kari mentioned (thanks Kari, ). Maybe they will work with Quinoa or tapioca flour.

Mary Beth,

The Sunflower butter Polly mentioned has sugar in it so that is out for me. Maybe I can make my own if I can find plain sunflower seeds. Maybe on my next trip to whole foods hopefully next week.

Gloria,

Sounds like you are really doing well - maybe it will be me in a few months or so!

Pat,

I can find raw sunflower seeds at HEB/Central market - do you have those where you live? You can make nut butter in a food processor or a Magic Bullet.

Magic Bullets are really cool. Bed Bath and Beyond sells them for about $50. They are great for making smoothies but are really just a tiny blender so you can make nut butter in them. I haven't done this yet, but it's on my "to do" list.

I use my food processor to make nut butters. I still have some deterioration the day after eating nut butters. I'm not sure they're good for a raw gut. I may be more sensitive, but I've had to eliminate all rough foods in order to heal. I do admit to caving in and eating some when I'm hungry and looking for a snack.

Gloria,

I know what you mean about nut butters. They are convenient and kind of a comfort, stick-to-your-ribs food when hungry. Plus so tasty!

Blessed are they who can laugh at themselves, for they shall never cease to be amused.
