Coconut Pudding

Coconut Pudding

Coconut Pudding
1/4 c. sugar
3 tablespoons cornstarch
1 13-14 oz. can coconut milk (thick makes a stiffer pudding, thin makes a creamier pudding)
2 tablespoons DF milk
1 1/2 tsp. vanilla

Combine sugar and cornstarch in a small bowl and set aside. Blend 2 tablespoons DF milk into dry ingredients and stir until the mixture is a smooth paste.

Place remaining coconut milk in a medium saucepan. Whisk paste into the coconut milk and cook over low heat, 4-5 minutes, stirring frequently until mixture thickens. Remove from heat. Add vanilla.

Pour pudding into 4 4 oz. dessert dishes and refrigerate 2 hours, until pudding is firm.

Hi Gloria,

Thank you for this recipe. I tried it using "lite" coconut milk instead of regular, and I just wanted to let everyone know not to do that. It
had no coconut flavor. However, it was very smooth, creamy and easy to make!

I've just changed the preparation slightly because I was always getting lumps. Now I gradually add the approximately 2T additional milk to the cornstarch and sugar first to make a paste, and then I stir it in before cooking. No more lumps!
You never know what you can do until you have to do it.

Could you please post what brand of coconut milk you're using? I'm having a tough time finding a brand without un-needed ingredients. Thank you!

Arlene, I thought I remembered JoAnn posting about guar gum-free coconut milk, and she did, but without brand names. She just said that she found several brands at a local Asian market. You might try one of those... I will be looking, too, since I apparently am quite sensitive to legumes.

Arlene, I just bought light coconut milk from Trader Joe's that just has coconut milk and water. It was 99 cents a can. Yay!! :grin:
