Pecan butter

Pecan butter

Yum!!!! And I seem to tolerate it!!!! I made it a couple of days ago but couldn't try it until last night. So far 24+ hours later I am still good. I am using my old food processor now. It works better than my old Vitamixer. I ran it for so long that the pecan butter is almost a liquid and I didn't add anything to it. It is almost sweet, at least to me since I don't tolerate anything sweet so far. It tastes kinda like pecan pie!

Hi Pat,

Thanks for the tip. Pecans are one of my safe nuts. I have looked for pecan butter in stores but have never seen it. Will have to try this.

Pat,

So glad that you've found another high-calorie food you can eat. Eating nut butters feels like you're eating a dessert, and they are nutritious.

Pat,

I missed your thread regarding pecan butter so I apologize for jumping in late but that is such great news! Hopefully you have continued to have success with pecans. I made an attempt at pecan milk about a week ago and it was wonderful so that is another drink option for you if you want to make a try of it. I think it might be my favorite of all the nut milks:)

My fingers are crossed that you are continuing to see success and weight gain (or at least no weight loss) with your LEAP diet.

Kelly, I missed it, too - what could possibly have kept us away!

Pat, that is wonderful news! On your inspiration, I think I'll try pecans sooner than later - I've always loved them. I know what you mean about the treat/dessert nature of nut preparations. The nuts I've tried all have a richer and more interesting flavor than I ever realized. The pistachio milk was incredible, and so far it seems to agree with me. (They were a huge favorite of my grandmother's - I would bring her pistachio butter when she had dental troubles that interfered with the pleasure of eating the nuts themselves.)

Pecans for Pat! And Polly can eat them, too! This thread deserves a giant party. Gloria, it was you who inspired me down this path - glad you're here for that festivity, too ;)
