Ok Folks I Just Have to Ask..... Bubble & Squeak ???
Would you willing eat something called "Bubble & Squeak" ?
Gabes introduced this dish to me for breakfasts for the first time. I have never heard of this but cautiously decided to give it a try... The result, It was incredible and more importantly settled great and gave me wonderful energy throughout the day.
Chez Gabes makes extra veggies and potatoes that she boils up until fork soft and has these with dinner or lunch.... Leftover veggies and potatoes are gently heated in a skillet in the morning with just a small amount of rice bran oil and some good Himalayan sea salt. While this is heating up, she poached a few eggs the warmed veggies and potatoes are put into a bowl and the eggs are served onto of the mixture... Wow that was a great MC Friendly breakfast.
In my wildest dreams I never thought I would be in Australia enjoying 'Bubble & Squeak' with a great mc friend.... My next mission is to try and cook that here, I plan on trying that this weekend
You know with all of this happening in just one short year, I wonder what the next year holds in store for surprises... I can't wait to find out.

It sounds wonderful except of course for the eggs with me too. Barbara is right on, when someone else is doing the cooking, everything is better. With MC I'm doing more cooking than ever.
Are you back from Australia? Seems like you just left. I have a feeling that your next year is going to be far more exciting in a good way. Now that you have your health under control, you can concentrate on other things. I

(pssst in oz it is 'pan' - we dont have skillets) actually i dont use any oil to warm the veges, it is a good quality non stick pan.
Rich - based on the MRT discussions (thanks mary beth) i have swapped from frying the eggs to poaching so the cooking process is more gradual and reduce the amines. I think I have been able to tolerate eggs much better since doing that.
with the PH situation and GERD, the least amount of oil of use the better.
I am lucky that i can tolerate eggs, even with the expense of buying the good quality free range ones it is still my cheapest form of Protein in my eating plan
and it has Vit D in it. I have 3 small eggs or 2 large ones every day with the veges or my irish soda bread for breaky.

FWIW, I'm probably the only American who slept through the wedding, and didn't watch any recordings of it. Frankly, I can't see the point of all the hullabaloo, either. Imagine what could have been done with all the money spent just by the media to cover it for so many days, to say nothing of all the tourists, and the fortune spent on the wedding itself, and all the associated rigamarole. It boggles the mind.
