Hi All,

I'll have to try bubble and squeak now that I know I can do eggs. I'm always open to new MC meals. I agree with Gabes, free range eggs are still the cheapest source of good protein and other nutrition.

I thought the wedding couple looked terrific - especially Kate. She is breathtakingly gorgeous, I think. But I feel sorry for the life she will lead in the media's eye constantly. I don't know how anyone can stomach that. Give me anonymity (sp?) any day!!!!!!

What I don't get is the hullabaloo over the DRESS. I guess I'm not a girly-girl....growing up I never had any dreams about my wedding dress. In fact, I've never been into clothes at all. I guess I'm missing the "style" gene. Tee Hee.

Mags, where did your comment come from? I agree, but am not sure what prompted it. I must be dense today........

Missed the wedding here, too... And definitely didn't get the style gene! I am having a funny fashion moment lately, where very hip, very young urban gals stop me on the street and say "excuse me, ma'am, I like your outfit" - when I'm wearing something I've scrounged from my husband's cast-off pile in some random combo with whatever else I could grab on the way to take the dog to the park. I love middle age - it must be the attitude ;)

Gabes, we eat a lot of duck around here - one of our local farmers makes a duck bacon that's incredible.

And we do a similar breakfast - cooked sweet potato, and we actually drop the eggs in on top late in the cooking and they poach right on top. Sometime's we've done this with other veg, but there's something very sunny about the egg/sweet potato combo.

I am so glad you mentioned about the cooking method for eggs - I will know my Enterolab results soon, but meantime will stay away from pan-frying them, in case that helps.

I will have to say that the poached eggs settle far better than the pan fried ones by far. I had been limiting the amount I eat because of this, but the ones Gabes made that were poached for breakfast settled great. I have made that twice here and it has been a wonderful breakfast!

From a nutrition and MC friendly standpoint, is a hard boiled egg as safe as a poached egg? That I could stomach.

Sure, I see no reason why it wouldn't be. I ate many a hard-boiled egg when I was recovering. Some days, I would take a couple with me, to eat while I was out making deliveries.

Rich,

You can make a hard-boiled egg that's less "hot cooked" if you bring eggs/water to a boil, then turn the stove waaay down (or off, depending on how much of a rush you're in). Like Tex, I'm a big fan of the portable HB egg, too!

You can also poach them a little longer, of course, and get more of a 10-minute kind of egg. We're having a fine-tuning issue here with that - Robert's idea of the perfect egg is a little more primal than mine ;)

Peeling gets harder if you wait too long. If you crack the shells and rinse in cooler, they're easier to peel. I have a container that is just a bit too short, so it slightly flattens them. This is surprisingly useful, because they don't roll around and try to escape when I settle in to eat ;)

My mom made a terrific potato salad with HB eggs, oil & vinegar. I'm going to try that with a safe vinegar and with lemon juice, soon.

Yep
i have used a hardboiled egg as a day out type of protein....

i like my eggs white cooked, yolk runny, so poaching allows better optimisation of 'gabes perfect egg' and for prep in the mornings, poached is a bit easier than boiled

I absolutely love bubble and squeak and have eaten in many times both in England and at a small British restaurant close to home.

The Royal Wedding - Was up for it at 4:00 AM and have the British flags flying out front. Guess my connection to England had me tuning in. I thought the dress was elegantly simple and so hope that Catherine (Kate formerly) can avoid the life Diana had to lead.

Maggiem my connection to England led to me getting fed up of the daily news on the wedding, getting sick of the sight of the words 'Kate and William', sick of the Union Flags and all other things British.

However, I did see the dress and it was BEAUTIFUL, apparently it was based on Grace Kelly's or something?

I'm not sure I could do a pouched egg (texture), but I'd love to try hard boiled. Does hard boiling them cut down on the histamine? And, do the free range ones have less histamine? I'm still a newbie for sure.

I thought the dress was gorgeous and very close to my own from 29 years ago. Apparently, Kate has very good taste. :lol:

Raw egg whites are apparently a potent source of histamines, whereas some histamine restricted diets show that cooked eggs are allowed, (maybe they all do, for all I know).

It appears that histamine plays a vital role during the egg formation cycle in a hen, so that's why it's there in the first place. Because of that, I doubt that eggs from free range hens would be significantly different, (as far as histamine content is concerned).
