Low Sugar EF Almond Muffins
1½ cup GF flour*
1/3 cup sugar
¼ tsp. salt
2 tsp. baking powder
1/3 cup oil
½ cup almond milk
1 tsp. almond extract
Combine flour, sugar, salt, and baking powder. Add oil, milk and almond extract to dry ingredients and mix well. Fill lined muffin cups until almost full. Bake at 400º for 20-25 minutes until a toothpick inserted into the center comes out clean. Makes 7-8 muffins.
*I use a quinoa-almond flour mixture:
½ cup quinoa flour
½ cup cornstarch (or potato starch)
5 Tbsp. potato starch (or arrowroot)
3 Tbsp. almond flour

Do you have a larger supermarket near you that carries Bob's Red Mill products? I was able to get BRM arrowroot there and I believe they may have carried another brand. Sometimes larger health food stores will have it too.

Tex is correct; I use the blend that I listed below in the recipe. I bake them in silicone baking cups so that they don't stick to the sides.
I have had a difficult time finding 20 oz. bags of arrowroot in the sections where Bob's Red Mill products are found in grocery stores. I've found them at Whole Foods, which didn't have them by you, and at a health food store. It is pretty expensive in the small bottles.
You can also purchase it online through a variety of stores.
