Egg-free, Soy-free, Vinegar-free Mock Mayonnaise

Egg-free, Soy-free, Vinegar-free Mock Mayonnaise

1½ teaspoon dry mustard
2 teaspoons sugar
1 teaspoon sea salt
½ teaspoon xanthan gum
dash paprika
¼ cup moist almond pulp (no skins, saved from making almond milk)
6 tablespoons cold almond milk
1 cup flavored oil (olive, walnut, etc. - for extra flavor I use 1/4 c. hazelnut oil and 3/4 c. almond oil)

Combine mustard, sugar, sea salt, xanthan gum and paprika in a small mixing bowl. Blend almond pulp into dry ingredients with a mixer. While mixer is running, add almond milk. Once mixed, add oil in a slow, steady stream at high speed, pausing to blend oil completely with mixer. Continue to beat until mixture gets creamy and thickens. Do not overbeat. Chill. Makes 1¼ cups.
