Caribou Bites

A GF/DF/SF/CF/EF friend made these for a recent women's retreat at church, and they were well-liked. They are not very sweet, even with all that honey (or agave nectar). If you can handle the seeds, they make a good snack or dessert treat.

Caribou Bites

Wet Ingredients
1-1/2 cups honey
1/2 cup coconut oil
2-1/2 cups unsweetened cocoa powder
1/2 teaspoon salt

Dry Ingredients
4 cups coconut
3 cups sunflower seeds
2 cups pumpkin seeds
1/4 cup chia or flax seeds
Optional—dried blueberries, or peppermint oil

Mix dry ingredients first. Heat wet ingredients until melted. Add the cocoa last and watch it so that it doesn’t turn solid.

Mix wet and dry ingredients thoroughly. Press into a 9x13 pan. Can line with parchment paper for easy lift-out. Put in fridge to make it more solid.
