I'm so happy for you Sheila. I know what you mean about nightshades. They are not good for me either.

I LOVE AVOCADO! I eat tons of them. They kind of take the place of cheese in a lot of things for me ( so creamy). I also cut them up with beets and toss with some vinegar and oil for a "side dish". A little garlic salt makes them even yummier :) Now that I can have some salad, I always add them.

Tonight I made some DF pesto and will toss it with some corn pasta. Artichokes and some chicken will go with it. I cut up a Tuscan melon for my family and plan on trying a few pieces as my "test". Wish me luck!
