I used to supply the chip and tortilla industry with food grade corn, so I've spent a lot of time in those processing facilities. Masa, by definition, is corn steeped in heated lime water, and then wet-milled. With most masa products, most of the lime is rinsed off, before the corn is wet milled. The products that are "lime-flavored", simply aren't completely rinsed, so that they retain a strong lime flavor, (which I'm not convinced is healthy, since lime is very caustic, and it has traditionally been used to hasten the decomposition of "refuse" - years ago, it was used in outhouses, to cut down the odor, and hasten the decomposition of the waste). Murderers have been known to cover hastily-buried corpses with lime, in order to speed up the decomposition, to destroy the evidence. Stomach acid should neutralize it, but it's probably hard on the teeth.
Fritos are merely extruded whole corn, so they are not treated with lime, but virtually all other corn chips, (including tortillas, tortilla chips, etc.), are made from masa, so they are all made from corn that has been cooked in lime.
Cooking degrades lectins in all food products, and, of course, this happens during the process of making masa. Masa is wet-milled corn that has been cooked in lime water, and masa flour is simply masa that has been dried, and then ground, to make flour.
