Does that recipe for coconut tortillas involve eggs? I am hoping for an egg-free version (but my "tex eggs" date is only a year away!)
I recently read a great review of these, but haven't tried 'em yet - http://improveat.com/whatoffer.php - I can't wait. The review said they're expensive but a real treat for folks who haven't had a sandwich or wrap in... a long time. It was a Paleo endorsement from the Whole 30 people (and I'm thinking about doing my own version of the Whole 30... 'cuz GF/DF/etc.F just isn't tough enough - the great news is a friend may try it along with me, and I am hoping hard that it helps with her health concerns).
I think I'm leaning a little too hard on the potato chips.

Do you make your own bread? Dee has some great bread recipes, artisan and sandwich are 2 I like, the store bought are so expensive and small-- haven't impressed me. I make a double recipe, cut, separate with wax paper and freeze. Then defrost and toast.
If you can tolerate eggs, there is nothing like a good egg salad sandwich. Good in corn tortillas also. I am using the Earth Balance soy free buttery spread, it works well in baking and everything. Wal-Mart super stores have a good price. Also, the Best Food or Hellman mayo with the yellow lid is soy free if soy is a problem for you.
Back to the egg salad, many years ago my girl scout leader said we would do a day "camp out" at a park, and learn how to make grilled cheese sandwiches. Well, Mom had no cheese in the house, and didn't want to go to the store, so sent me with egg salad. It was such a hit that all these years later I make them for my family and they love them. Just butter the exterior and fry.
If you like shrimp, making a shrimp salad filling like you'd do tuna is good. You can get canned or frozen salad shrimp. You can also make a spread from leftover chicken, turkey, beef (like pot roast). Either cut fine or put in processor with mayo.
