GF/oil free pumpkin bread

I have not used coconut flour but had saved this information from the gluten free goddess website.
"Coconut flour is sweet and fabulous. It's high in fiber. It soaks up moisture like crazy, though, so be careful using too much of it in a recipe. Start with a half cup in a gluten-free flour blend for best results. Eggs help coconut flour work best.
Subbing denser flours such as almond, buckwheat, coconut, or quinoa flour will result in a heavier, denser product if you add too much. Start with a third to a half cup in your flour blend. Experiment and find the formula and texture you like best."

I have cashew flour but have not baked with it yet, I'm going to try it as a substitute for almond flour, will let you know how it works.

Thanks, Leah and Donna. I think I will try it. And maybe add more eggs or applesauce to counteract the dryness. I have tried baking with pecan and walnut flours , but they are expensive and almost impossible to find. (I cannot tolerate almonds or cashews, unfortunately)

Good morning, Polly, and Happy New Year. It is hard to find nut flours other than almond and hazelnut. Have you tried grinding your own nut flour? Large bags of walnuts and pecans aren't that expensive and grinding the nuts in a good food processor and/or coffee grinder works well. I like to mix some coconut flour into almond flour when making zucchini pancakes. The nut flour is heavy and doesn't absorb eggs as well as coconut flour. I've been grinding oats into flour as needed in a small electric coffee grinder and that works well, too.

For anyone who can't eat some of those ingredients, I find that you can just eliminate them. I don't use any sugar when I include bananas or applesauce. I pretty much just use the flour and fruit with baking soda, salt and water. Not nearly as good as your recipe, but I'll keep it for "someday" when I can eat more foods.
