HI Texfiend,
It is low histamine because I freeze it....it doesn't have a chance to continue building histamine sitting in the refrigerator, the longer a food sits on the counter or in the fridge the faster it can build histamine levels. Hence a rule of thumb is to eat your leftovers within the next day or freeze it, otherwise throw it away.

The Cornish hen is just because that is a safe meat with bones for me ( I tend to react to the chicken protein if I eat it very often).
