This is strange to me because my GI dr was encouraging a high fiber diet?

Most gastroenterologists don't understand this disease, and that's why they can't successfully treat it, without prescribing steroids, or powerful immune system suppressants.

My understanding from Tex's book is that proteins are what cause the auto immune response in MC. If this is the case, why would other non-protein foods be triggers once the gut has healed?
