I'm not sure why you would be reacting to the duck, unless it had been injected with a (tenderizing) solution, or you added something to it while it was cooking, or afterward. It's been too many years since I tried betaine HCL, so I don't remember what my reactions (if any) might have been. And I don't recall anyone else posting about a reaction like that to it. But if I had to guess, based on your description, I'd guess that the betaine HCL probably caused the problem. Sorry I couldn't be more helpful.
Maybe someone else can shed some light on this.

What I’ve read and experienced as too much Betaine HCl just gives you sort of an ACID INDIGESTION ( eg burning warm feeling) type reaction. I never felt it made my diarrhea worse or have any weird poop reaction to taking too much of it. I started backing down on my dosage just because I felt that weird burning stuff going on.
And like said ...for me once I inched up to 5 pills per lunch and dinner meal ...gurgling churning guts quieted down. Felt better!
