I believe that the virus is always there, (as is probably true of all viruses, once we have acquired them). I believe that they are an integral part of our bodies, and a primary influence on our genetic makeup. I don't believe that we can ever really get rid of a virus, we can only encourage it to become inactive. Viruses are unique--totally unlike bacteria. They are normally beneficial, but they can also act as pathogens. They are a part of our composition and their primary function appears to be to help us to adapt to new items in our lives, by changing our DNA structure.
I believe that the primary problem with food triggers is the lectins, which as you know, are naturally-occuring plant toxins, designed to kill or deter predators of the parent plant. The theory is, that the virus perceives the lectins as a threat, (to itself, not to us, as the host), and it sets out to destroy the threat. This, of course, sets off our immune system, which assumes that the viral activity is an enemy attack, so it attacks the virus, and that's where the inflammation and antibodies originate. Discontinuing the ingestion of the particular food with the lectins that trigger a viral attack, will obviously resolve the inflammation issue, since the virus will withdraw, once the lectins are gone, and then our own immune system will call in the troops and head back to the fort.
Note that this theory is consistent with the prevailing notion that autoimmune reactions are due to our immune systems attacking our own bodies, since viruses are an integral part of our cellular structure.
If the virus were not always present, then we would not suffer a recurring active MC episode, each time we ingest the trigger food/s. Some people eventually reach a point where they no longer react to certain previous triggers. Presumably, in those cases, their virus has managed to modify its, (our), DNA structure to tolerate those previous triggers.
This is just a theory mind you, and most of it isn't mine--I got the basic theory from Dogtorj, and I think that he is the one who has developed much of this theory, (the part about viruses being a part of our evolution, designed to help us develop the changes we need to live in an ever-changing environment, and the part about the lectins acting as an antagonist to the virus), though other researchers are involved, also.
